Recipe Ingredients for Ackee & Saltfish

400 grams Ackee
400 grams Cod (used salted cod, soaked overnight and then boil for 20 minutes to remove most of the salt.)
4 cloves Garlic, minced
2 Green Onions, sliced thin
2 Tomatoes, minced
1 Onion, sliced thin
1 tsp Black Pepper
1 tsp becel light
1 tsp Scotch Bonnet Peppers (or sauce)

Recipe Directions for Ackee & Saltfish

  1. Saute Green Onion and garlic in Becel for one minute

  2. Add Tomatoes, Onion, Scotch Bonnet and Black Pepper and simmer for 10 minutes

  3. Add Cooked Flaked Cod or de-salted salt cod and simmer for 5 minutes

  4. Add Ackees and stir gently, so as not to break them, until hot.

  5. Serve with fried dumplings, johnny cakes, hardo bread or potatoes.
