Acorn Squash

I bought one. It's little.

This is my first acorn squash ala calorie count, so I'm wondering if I want to bake it halved in the over, do I weigh the whole thing? Also, can I bake it with anything other than oil or butter that will have it roast as well? Like applesauce?

Any tips??

I LOVE squash. I have so many sitting around my dorm room just waiting to be baked.

 

I cut it in half and remove the seeds, then weigh each half and log accordingly. 

Place the to halves cut side down in a lightly sprayed baking pan... add water to the dish (the squash should be sitting about .5-1inch deep in it) and bake at 375 for 50min.
Depending on whether you're making a puree or just eating the half, you can flip it towards the end to brown the top a little.

I love mine with a little cinnamon/sweetener and some hotsauce.

 

I also eat the shell too so when I weigh I account for the whole thing. If you don't eat the shell, weigh the remains and subtract it from your previous number.

I love roasted acorn squash! It's really good with some brown sugar and cinnamon, maybe some maple syrup. Enjoy!

ok, so great! Thanks guys. I'm trying to look for a roasting method without using any added oil, sugar or butter. I can't believe how freaking excited I'm getting over a squash.....

 

I need  a life.

Try spaghetti squash. Cut it in half, remove the seeds, cover with foil and bake in the oven on low heat. Then break it apart and eat just like spaghetti with pasta sauce. Can mix it with regular whole grain pasta if you like. Very good for you.

What do these squashes look like?

I'm dying to try this recipe with some alterations, no cheddar cheese, lo fat milk etc.

like a small dark green pumpkin with a less round shape.

I also do them with a little butter, cinnamon and a sprinkle of brown sugar. NOMMY!

I'm not sure of the nutritional value for this recipe, but I have been itching to try it.

I have made a similar recipe with butternut squash and it is amazing.

Butternut squash baked French fries are delicious.

I had these many years ago baked with a butt ton of butter and a lot of chopped onions in them. Dont know how good it would be without the butter though.

I love both acorn squash and butternut squash and cook them the same way.  I cut the in half length wise and scoop out the seeds.  I then put them cut side down in a sprayed 9x13 pan and cover with aluminum foil and bake for about an hour until tender.  I then scoop out the meat of the squash and enjoy.  One cup of acorn is about 115 and butternut about 85.  I like a tsp. of honey drizzled on my or maple syrup is good too.  I them pack the left overs in 8 oz containers and store for 4-5 days in the fridg.  Enjoy.
