Currently, my activity involves walking my dog for 30 to 45 minutes a day, doing yoga for half an hour about three days a week, and going on hikes on weekends, probably 2-5 hours mostly uphill each weekend. I put that as light.
Starting Monday, I start college classes, so I'll be walking my dog the same, walking to and from class, probably still hiking at least two hours a week, and I'm hoping working out at least 3 hours a week in the gym offered by college (I'm not sure even what I'll be doing there yet, because I've never even used exercise equipment, but I have a friend who works there). If I do these things, what will my activity level be?

You'd probably find that you're still classed as lightly active (by the old CC definition) and that you could keep going with the same calorie intake. If you found you felt very hungry or if you started losing weight at an alarming rate then you might be able to increase by 200 or 300 cals.
