Addicted to SAUCES? Yessss and Yummmmm!
Some people are addicted to sugar; others to carbs and others to fats. I suppose sauces falls into an all-3-in-one category. ;-P Since I believe that food is merely a vehicle FOR sauce (grin), I had to come up with many clever ways of making delicious sauces that taste mighty fattening, but are not. Have you also? I'm always looking for a new one. I have a ton, but here's one of my faves for fish:
Curry Cream Sauce
1 cup skim milk
1 Tbsp real butter
Melt top 2 together and then add:
1 tsp worcestershire sauce
1/2 tsp ground Cardamom powder
1/2 tsp ground 'sweet' curry powder
1/2 tsp ground Tumeric
Crushed Basil Leaves
THICKEN WITH: 2 tsp corn starch in a bit of water
You spoon this over fish or chicken or scallops and bake or braise via stove-top. You will think you're eating the most fattening sauce on the planet, but noooooooope, ya ain't! :-D

I am also a sauce addict and am interested in more of your recipies. One entire shelf as well as the door of my frig holds sauces, mustards and the like.
I use curry catsup (it is German) instead of normal catsup on many foods. It can only be purchased at speciality stores though and in my small town I usually have to resort to ordering it over the net.
