How do you adjust your meals?

Hey all!

I was just wondering how you all change or adapt your meals for summer (if you do!).  I've found that I almost always eat something hot (oatmeal, soup, etc.) and by time I'm done eating I've broken out in a major sweat and I'm just burning up!

I was tryin to think what I could have that was cold for dinner and all I could come up with was a salad =\

What are your favorite summer meals?

Salad would be the traditional cold supper!  But you can vary it massively if you're creative.   Try chargrilling some thinly sliced courgette, red pepper or aubergine, for example.  Or go to town with mixed beans, finely chopped red onion, balsamic vinegar and olive oil.  Pasta, cous-cous, rice, potatoes, noodles... all make a great base for salads.  Serve with some well-seasoned grilled meat, fish, boiled eggs, tofu, quorn etc.   Try different dressings and relishes as well... hummus, guacamole, plain yoghurt mixed with pesto.  Sprinkle over with some toasted seeds, olives, grated parmesan or chopped nuts.... some crusty bread on the side... Endless variations.

salads are great, especially as gi-jane has shows they are very versatile. i also like things like omelette, quiche, if youre brave try a cheese souffle! also vegetables stuffed with things like rice of couscus served with a salad!

This is a problem for me right now.

I find myself eating a lot of eggs and PB&J.

I just made the best meal, with no recipe which is rare for me.  I was very excited to find a big bag of arugula at Trader Joes and used 1/2 bag, put thin slices of beef on top, a lot of shaved parmesean and evoo.  It was wonderful.

I ate a whole canteloupe for lunch twice this week.  They are so juicy and sweet now.  My best one was from Walmart.

I eat pasta salads cold;  multigrain pasta, brocolli, red pepper and shrimp if I have it, onion, celery.

The ideas above are great.

There's also gazpacho, which is basically a chilled soup.  You can find oodles of recipes for it with a quick search :]

Sandwiches are good in the summer too.

I eat a lot of fruit, salad, and tuna in the summer... mix it up by using pita's instead of bread or different kinds of crackers... If I do have to eat something that's warm, I make sure to have some nice cool veggies or fruit with it.

One of my family's favorite recipes for the summer is called salpicon. Basically, you take some cooked shredded meat and mix it with some celery, green onion, black olives, cucumber, maybe some chick peas,  or whatever you like, and most importantly, some fresh squeezed lime juice. After it's all mixed together, you put it in the fridge to cool. Eating it with crackers is optional.

I buy the healthy life bread, FF cheese, lean ham or turkey w/ mustard- never mayo. Very healthy and about 200-250 cals for the whole sand. Lay's FF potato chips ocassionally. Just watch your portions.

My prob is I can't stay full. I eat lighter choices but I'm straving 1-2 hours later.

I take grapes to work to munch on. IDK, looking for more ideas myself.

I third the sandwiches!  Seems my family eats a lot of them.  We seem to grill a lot in the summer, so we eat a lot of stuff like turkey Italian sausage, steak sandwiches, steak or chicken shish kabobs...Also watermelon is a great addition to any meal.  In my house as soon as someone cuts up the watermelon it will be gone within 2 days, usually less.

ever since the summer began i've been wanting to eat sweet foods rather than "hot" foods more often.

for instance, i'll eat a peanut butter and jelly/peanut butter and banana sandwich for dinner instead of chicken and steamed vegetables.

garbnet, those are not bad choices if you use organic or ff PB. But try fresh strawberries w/ spenda or grapes to curve a sweet tooth too. :)

A great sandwich-like snack is whole wheat bread with a Laughing Cow cheese wedge and some slices of cucumber :D.
