I just tried canned pumpkin and I just love it !!!  I made a spice cake with canned pumpkin (bah - no one else ate it - men); made oatmeal "pie" treats.

Now I am just wondering what else it can be mixed with.  Like a handi snacks pudding, yogurt, other yellow cake mixes ....

How do you do your canned pumpkin?  Hints, tips, tricks and ideas are welcome : )

It is kick-ass and healthy

straight from the can, warmed up, with cinnamon & sugar. mmmmmm.

I love the pumpkin mixed in with a box of yellow cake mix and a cup of water..Bake in 13 x 9 inch pan..this is a ww recipe and quite good.. Kim

For a  guilt free dose of pumpkin add a spoon full to your oatmeal in the morning.  I sprinkle on a little pumpkin pie spice throw in a few raisins and its delicious! 

I recently made awesome Pumpkin Pancakes. I cut this recipe (http://recipecircus.com/recipes/billk54/BREAK FAST/IHOP_Pumpkin_Pancakes.html) in half, omitted the butter, added some cloves & subbed whole wheat flour & cane sugar. CC tells me a serving has 260 cals. So good.

I also love to put canned pumpkin in oatmeal with cinnamon, ginger, nutmeg & allspice (or cloves) + pure maple syrup.

Or bake pumpkin muffins :)

Don't forget Pumpkin soup! it's tasty and low cal (well, depending how you make it!) There are a lot of soup recipes in CC, I make mine as a savory dish using onions, carrots, celery, garlic and low sodium chicken broth.  Curry pairs well with pumpkin too so you can really play around with your spices.

I make pumpkin soup, pumpkin protein pancakes, and diet crustless pumpkin pie. I sometimes mix it with onions and mushrooms cooked in some olive oil and have it as a side dish. Oh pumpkin bread (with chocolate chips if you're naughty which I am) is one of my absolute favorites and you can use splenda and applesauce instead of sugar and oil and it's really not bad calorie wise.

I make pumpkin chilli, which is pretty much your standard chilli recipe with a can of pumpkin mixed in. It thickens it up nicely and is a very good flavor.

Another thing is sugar free vanilla pudding. Put in some pumpkin and then pumpkin pie seasoning and it's great! Just like pumpkin pie without the crust!

 

I live just a couple miles away from where they make all the Libby's Pumpikin Pie filling.  Every year the town has a pumpkin festival.  The have everything pumpkin; pancakes, pie, ice cream, and just about everything else you can think of.  I LOVE FALL!!!!

thanks you all for the idea.  a savory pumpkin would most definately be new and challenging for me. i'll try anything - perhaps i'll like it.

I have to share what I tried.  Crescent Rolls, with a tablespoon of pumkin and brown sugar & cinnamon, then roll the crescent the way they are usually rolled (but with the pumpkin filling) and bake as directed on the crescent roll package.  Oh my gosh, it was like a donut !!!  Absolutly delicious !!!  Now, it's got me thinking to spread preserves, cream cheese in a crescent roll for a cheap donut fix.

Pumpkin Muffins!

1 can pumpkin (not pie filling) 1 box spice cake mix....1 teaspoon cinnamon and 1/2 teaspoon pumpkin pie spice

MIX it all together

Spoon in mini-muffin pans (makes about 18-20 minis)

Bake at 350 for 22-25 minutes

My version of pumpkin muffins...absolutely yummy!  The size on these is a normal cupcake.  I use white pinto beans which makes them reasonably healthy.

Sounds strange but i have been making pumpkin smoothies for breakfast!

I use dannon light n'fit vanilla, canned pumpkin, Orange juice, half a frozen banana, and cinnamon. After i blend all of it up i add fiber one. It tastes like pumpkin pie :)

Yay for pumpkin love! I admit I am obsessed with pumpkin as well and this time of year just increases the love as there are so many different varieties of pumpkin foods.

I make pumpkin soup

Canned pumpkin, onions, carrots, celery, cauliflower, squash garlic, tumeric, raisins, sea salt, sage, 1/2 cup of soy milk (any kind of milk will work) pepper, 1 tbsp olive oil.

Ofcourse all of the great pumpkin pie, custard, pudding muffin recipes are fabulous too!  I think this board alone could keep Libby's in business! ha!
