I've just started doing a high intensity 60min aerobics workout, now I'm pretty sure I don't have to do this everyday to be healthy but how many times a week would you recommend to do this in order to stay in shape/fit? Bearing in mind I already do Pilates twice a week.
The Center for Disease and Control recommend exercising 150 minutes a week. Breaking down into (5) 30 minutes sessions. Also, they recommend two weight training sessions a week. Check out the link http://www.cdc.gov/physicalactivity/everyone/ guidelines/adults.html
Based on your information I would say you would be safe with 3 aerobics classes a week and then the pilates for strength. I would throw in a little walking to outside on the other days. However, if you are trying to achieve weight loss, you might want to add another day of cardio.

That's a huge help, thanks so much for replying.
Pilates is flexibility/mobility/rehab training, not strength. It's part of a well-rounded fitness program, but it doesn't come in under the strength heading unless you're a previously sedentary beginner who hasn't mastered bodyweight exercise.
