What are you all doing with leftover turkey???
There's a part of me that thinks, "God, if I have to eat one more bite of this, I'll never eat turkey again!!".
My father in law constantly worries that there won't be enough food for everyone. He brought over a 19lb turkey - and there were only 6 of us eating!!! Needless to say, I've got half a turkey breast in the freezer in addition to a ton of dark meat leftover. I've brought a huge salad into work today with a little turkey meat on the side. Any other suggestions/recipes????? My dog is just waiting for me to give up and send the remaining turkey her way, but I'm not quite ready for that yet.....

Spicy Soft Turkey Tacos! Yum. I personally use a bit less oj and more garlic than the recipe calls for but it's good even as written. That's what we're having tonight, with chipotle mashed sweet potatoes.
We're having Turkey Bolognese tonight. The Turkey Taco recipe sounds great as well!
I heard that you should have used it up within 4 days (by Sunday)....
So maybe you should throw it out now. Unless you froze it... in which case you could wait a week or two... til you're not tired of it anymore.

I went to TWO dinners on Thursday and neither place had any leftover turkey :(
So, I did what any creative dieter would do.... I took home the carcass and cooked it in the crock pot all day on Friday to make an awesome turkey noodle soup! I actually came up with a lot of meat, too!
I figured out it was only 66 calories per bowl, so I froze half for a rainy day.

Frankly my leftovers are in the freezer.
I boiled down the "carcass"- made a broth with lots of turkey bits in it. In a couple of weeks, I'll make turkey and noodles with it. The rest of the meat is frozen, and I'll probably chop it up and make turkey salad (like chicken salad) with it.
We ate turkey meals for three days and that's enough of anything!

I froze some in 3 ounce portions. The rest I chopped up and made a fat free sauce. I've been having it over brown rice with a dab of cranberry sauce, a green vegetable, and a baked sweet potato. There's enough for one more meal.
I just gave the leftovers away to an Aunt and to a brother-in-law. Neither of them cook and were very happy to get the leftovers.

we make TURKEY SLOP, it's just everything thats left thrown in a pot with gravey and served over left over potatoes. Have not idea how many calories but it sure is good!! Cost is about 2 hours on my bike trainer in the basement but worth it once a year!

I ate turkey w/ black pepper 2 meals a day since Thanksgiving and finally broke my plateau.

I've been putting a lot more cheese on my husband's portion and wrapping it in a tortilla, baking it and calling it an enchilada.

Sometimes I'll make turkey salad (like chicken salad but turkey), or turkey soup - my fave is turkey and stuffing sandwiches on wheat bread. And save the bones - you can make turkey stock out of them for the winter for soups!! That's what I'm doing (they're in the freezer now, wrapped up).
here's a simple one, turkey sandwhich, just use left over white meat, whole wheat bread, ketchup, maybe cheese( i personally like it better without cheese) and u got yourself a healty and tasty lunch
