Any and all tofu Recipes? Grilled?

Quote  |  Reply
Howdy all! I'm a big fan of tofu, but don't have a lot of experience cooking with it. I enjoy grilled tofu, and was wondering how to season it. If you have any recipes for grilled tofu, or ANY OTHER tofu dish(doesn't have to be vegitarian, but I have yet to see a tofu dish that wasn't), please post it here! ~Rob

I like to slice firm tofu about 1/2" thick and marinate the slices overnight, then drain well and cook on a grill pan.

Asian Marinade - 4 tbs soy sauce, 1 tbs rice vinegar (or any mild vinegar), 1 tsp honey, 1 tsp hot sauce, 1 clove garlic, crushed, 1 tsp grated ginger, 1/4 cup orange or pineapple juice.

French Marinade - 1/4 cup white wine, 4 tbs fresh herbs, finely minced, 1 clove garlic, crushed, salt & pepper

Italian Marinade - 1/4 cup red wine, 1 tbs tomato paste, 2 tbs fresh basil, chopped, 1 clove garlic, crushed, 1/4 tsp dry oregano, 1/4 tsp dry crushed red pepper.

Other ideas -
mash soft tofu and use instead of ricotta cheese in lasagne.
Float little cubes of Silken tofu in soups or toss in salad
Add tofu to meat loaf and meat balls
This recipe is from WholeFoods market -I have eaten their cooked version then made it myself from their online recipe. It is very very good. Pan-Fried Sesame Tofu Serve with steamed bok choy or broccoli, sautéed watercress or eggplant, and brown rice.

  • 14 oz organic extra-firm tofu
  • 1/4 cup cornstarch or flour for dusting
  • canola or corn oil for frying
  • 1/2 cup sesame seeds, lightly toasted
  • 1 bunch scallions, trimmed and cut into 1" pieces Sauce
  • 1/3 cup honey
  • 3 TB tamari
  • 3 TB finely minced ginger
  • 2 TB sesame oil (not toasted)
  • 2 TB rice wine vinegar
  • 2 cloves finely minced garlic
  • 1?2 tsp red chili flakes
Wrap tofu with paper towels and place on a cutting board. Put another cutting board or heavy plate on top to press out liquid about 20 minutes.

Stir together sauce ingredients in a saucepan. Simmer sauce while you cook tofu. Dry drained tofu with paper towels and cube. Dust very lightly with corn starch or flour. Heat 1" oil in a deep frying pan. Fry tofu in 350°F oil until golden brown. Place fried tofu on a large platter or bowl and toss with 2/3 cup warmed sauce, sprinkle liberally with sesame seeds and scallions, toss gently. Serve with remaining sauce for dipping or to drizzle over vegetables.
I'm going to try that trick of pressing out the excess water!  Thanks so much!
this compote would make a pretty good marinade: tomato-olive compote

let it sit in that compote for a while then grill it and put the compote atop it.  yummy with wild rice.

and here's an indian-style dish: Quick Tofu Curry w/ Peas

i hope you can get to those links . . .

regards,
Guy
