so, i drink almond milk but being that i am one person and don't have milk daily i find it difficult to drink it within a week of opening the container, so i always have it for longer than that. do you think it's safe to drink after it has been open for longer than a week, the same goes for many veggie deli slices and i just ignore that little suggestion. does anyone else do this and do you think it's safe?

It sometimes takes me a week and a half or more to go through a carton of almond milk, and I've never noticed any ill-effects.  I don't drink from the bottle, either (not implying that you are, heh), which I think helps curb the proliferation of bad bacteria.

I guess it boils down to what you think is best for you.  Mine always seems to pass the 'smell' test in the period in which I use it, and it hasn't curdled or gone funky on me.

As for veggie slices, I can't eat soy, so I'm not too sure on that one.  Before I gave up soy, though, I used some ground, refrigerated veggie sausage several weeks after opening it and didn't get sick.

I am the same way with almond milk.  I don't drink it every day when I have it, so it always takes a week or two to finish the carton.  I've never had a problem.

 

I love almond milk and buy it as a variation on my morning cereal...  Since I am not lactose intolerant, I don't have it every day.  I routinely take about 2 weeks to finish the carton and have never had a problem.  I wouldn't be too worried, especially if you keep it in a part of the refrigerator that stays cooler (i.e., not on the door).

If you are still worried you could always freeze half of it :)

lol i actually threw mine away this morning.

it has been approx two weeks, i think.. and i noticed some greenish black coloring around the opening. so even tho it smelled OK, thats something that could be over looked. my suggestion? a week and a half at longest.

I've been known to keep an open container in the fridge for 2-3 weeks with no ill effects.  I've only had it go bad on me once - and I think then it had been siting in the fridge for over a month; it got pushed behind something else and I had forgotten about it.  It kind of solidified and it was really gross.

so when it goes bad I will know it because it will be more solid than usual??

Yeah, well I guess.  Mine I think had a layer of solid stuff and liquid underneath or vice versa.  I smelled and it didn't smell bad but when I poured it out, it came out in a clump.  *Gag* 

I just wouldn't use it after about 2 weeks even if it still smells/looks OK.  Like a pp said, if you can't use it all within that time frame, then freeze part of it!

i most certainly keep my almond milk for longer than a week. i live alone and use almond milk exclusively as my milk alternative, so the container kicks around for about 1.5 to 2 weeks sometimes... :/ Never goes bad though. It helps to keep it extra cold if possible.....I've never gotten sick from it or anything.

As for soy products, I'm much more careful. Certain things I keep longer than suggested because they just tend to keep really well. But be real careful with the soy cheese. From my experience they get funky..Fast.
