Almost No Fat Banana Muffin Recipe

Allrecipe.com idea, taken and tweaked to my liking (less sugar and applesauce). Dense but tasty; a nice breakfasty snack or dessert item.

Ingredients
1 1/2 cups all-purpose flour
1/2 cups granulated (white) sugar
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
2 egg whites
1 cup mashed banana(s)
1/8 cup applesauce
Directions
  1. Peaheat conventional oven to 350 degrees F and place muffin cups into regulation-sized muffin tray.

  2. Blend flour, sugar, baking powder, baking soda and cinnamon; add egg whites, banana and applesauce, stirring until combined. Pour batter into cups (it's recommended to fill them up about 3/4 of the way to the top).

  3. Bake for fifteen minutes (time may vary from oven to oven), checking every five or so. Remove from pan and place on wire rack to cool as soon as possible.
