Alternative egg muffin!!
Well I am sure everyone does this already, but I just have to rave about my homemade egg muffin (pretty basic!).
I used to CRAVE the sausage mcmuffins from McDonalds, but after knowing how unhealthy they are i won't let myself have them anymore.
This morning I made 1/2 cup of egg beaters (60 calories), and made it into a little mini omelet. Then I toasted a 100 calorie English muffin, put on one piece of American cheese (70 calories), and 2 slices of deli thin 98% fat free ham (17 calories). It was soooooo goood, and soooo filling!!! All for 247 calories!
I'm definitely looking forward to these a couple times per week!
Sounds delicious! I just wish i could buy liquid egg white here in the UK, ive looked everywhere lol.
There is no where to buy it? That's crazy!
Why don't you just crack an egg and take the yolk out?
Or better yet, crack an egg and fry it in a nonstick pan and eat the whole thing - it's only 70 calories and 100% good for you.
mmm i was thinking about bringing in half a dozen eggs to work and making that for my breakfast one week, just minus the ham and cheese. I alreay make my english muffin and I do enjoy eggs for breakfast. I did this when I lost my first 10 lbs.
a80, that was brilliant! i actually went grocery shopping and bought the stuff..
i had whole wheat muffin (130), one slice fat-free cheese (30 cal) 3 slices extra lean smoked turkey breast (30 cal) one egg white (16) 1 slice of tomato (5) with 0 calorie becel topping and soe hot sauce.. all for 211 cal!
it was so good i actually felt like i was totally breaking the rules...too good

Wow! I am totally adding the tomato and hot sauce next time...that sounds SOOOOO GOOD! I am also going to look for lower calorie cheese, because 70 seems like a little too much. Doesn't it seem like a crazy indulgence?!?! AND it is super filling!
I do the same thing! Except I substitute the ham for minced tomato and onions. Oh, and I use one eggwhite per muffin half instead of egg beaters. It's so delicious...I'm glad someone else likes the egg mcmuffin alternative!

I cook my egg (scrambled) in the microwave for about 30 seconds, flip it over in it's little bowl and then add fat free Kraft american cheese (cook for an additional 15 seconds). Makes it fast and easy to make these at work.
I am going to try the lite ham and hot sauce after reading this.

How do you cook an egg in the microwave?!?! I have been wondering this....
I miss egg mcmuffins so this was great. i went grocery shopping today got egg white, laughing cow swiss cheese, english muffins and turkey bacon gonna try it for breakfeast tomarrow. with 1/4 cup egg 30 cals 2 slices of bacon 50 cals 1 triangle of cheese 50 cals and english muffin 130cals it comes out to 260 calories.
