amazing, fantastic 24 cal potato pancakes
no folks, i'm not kidding. they're really good and 24 cal
each. i had three for dinner with some cauliflower (a recipe i
got from another post on this site) and a salad, and i damn near lost
my mind at how full i was and how many calories i didn't eat. so,
give it a try.
potato-carrot pancakes:
1 large potato, grated
1 carrot, grated
1 tbsp flour
1 egg, slightly beaten
salt
pepper
combine all ingredients, spray a pan or griddle with no-stick spray and cook them in 1/4 cup portions like pancakes. in my opinion, they definitely needed more seasoning, so i added onion and garlic to the mix. but experiment, it's fantastic. i bet they'd be wonderful with some no-fat sour cream too. mmmmmm. i'm gonna try that next time. i doubled the recipe and it fed 3 of us with a few pancakes left for my lunch today.

Ooh, I miss latkes... we always used an onion instead of a carrot, though. I forgot those were probably low-cal before we put all the sour cream on em!

When I grew up my dad used to make us Fried Potatoe Sandwiches.
Take 1 potatoe and slice into rounds, kinda thin. Brown in a frying pan, salt. Put in buttered bread and ketchup. Awesome. I usually only make these now when I am drinking. It's kinda a party thing. I know weird but all my friends now love them too.

Hey saroful - latkes? The whole point is the greasy deep frying, isn't it?? This sounds good - maybe I'll give it a shot.
I made these the other day, but used an onion instead of the carrot, and a little garlic powder. They were really good, I ate one with a dollop of nonfat sour cream, and the another one with some applesauce. YUMMY!
I bet these would be yummy with salsa... Thanks for a good lunch idea.
They sell frozen vegetable pancakes at the grocery store (sorry can't remember the brand) However they have zuchini in them too. I figured I'd mention it because they are yummy with zuchini. If you want to save on the carbs instead of using a potatoe try grating a white turnip or you can also grate cauliflower too. It's fun trying to think of alternative ingredients for our old favorites.
Hey I made these last summer with Zucchini and onion .I never thought of them being low - cal. They were yummy and helped use up alot of zucchini from my garden. Thanks for the info.
