ack - so i'm super excited - i just discovered the wonderful world of Amy's Kitchen products! *yes hi, i live under a rock*  she has some fantastic sounding meals, whole meals, for around 300 cals! This is great for those who are culinary challenged, like myself, and can only seem to master the use of a toaster, microwave, and george foreman grill. oh and i'm fairly capable at handling an oven to heat up a frozen pizza. and i can make a mean pot of coffee :)
anywho - i just had to share and reveal whatta giant dork i am :)

I'm a serious Amy's fan.  I find it helpful when I forgot to bring lunch with me to work.

I love the black bean enchilladas meal--I keep it regularly stocked in my freezer.  The Santa Fe bowl is pretty darn tasty too.  Not as big of a fan of the burritos, but I've never been a frozen burrito girl anyway.  The soups are fantastic!  I keep a can in my desk drawer for emergencies (or lapses in memory with the whole lunch thing).

The only downside is the price tag--but when you think about how much you can drop buying something else that's just as convenient (and filling), it easily matches that cost.

tomorrow i'm going to try her scrambled tofu pocket sandwich! so excited! lol. : )

i just had an amy's single serve pizza last night and it was delicious! It tasted like a real, fresh pizza, can't wait to have another one! Also, I bought the brown rice and veggies bowl, its only 260 calories and it looks tasty!  

 

OH and amy's mac n' cheese is excellent :)

I really enjoy the Mexican Tamale pie --  150 calories. 

The pesto pizza is also really good.

When I first went vegetarian I used to buy Amy's all the time. I used to buy a lot of the frozen dinners, especially the enchilada and the veggie loaf. Nowadays, I don't eat frozen entrees all that often, mostly for economic reasons. Though I love dairy free pizza. It's got shitake mushrooms, artichokes, carmalized onions, roasted peppers....yum.
