Anti egg yolk?
Is there something I'm missing? Have egg yolks been declared deadly? There may be 1.6g saturated fat in a large egg yolk but quite a good quantity of iron and Vitamin A. The egg yolk is high in cholesterol but it's now understood that this makes no difference to our blood cholesterol. Surely the nutritional (and gastronomic) benefit comes from eating the whole thing rather than separating it out? And what happens to the egg yolks in an egg white omelette household? It would be a terrible waste to bin them.
Anyone else wish to 'big it up' for the much maligned egg yolk?

But i buy a carton of whites and for every 3 whites i use .. i add one whole egg.
It works for me ... and my OH who thinks that the yolk is the best part and feels cheated if our dinner only includes whites =)

some people probably eliminate the egg yolks to help control their cholesterol levels.
But you are right, they are a great source of proteins. My Mom has said that she has heard them referred to as the perfect food because of their good qualities. Like everything else, it is all a matter of how much you eat depends on how good it is for you.
I don't know what folks do for the egg yolks, but I would recommend giving them to your cat, dog, bird once they've been cooked.
Myself, I eliminate them because I am allergic to egg yolks.
I love the egg yolk in every way! The egg is a complete protein - and that requires the complete egg! Eggs are natural, whole foods, and I don't see a reason to not accept the whole darn egg if someone is going to eat them at all. In terms of a source of cholesterol and saturated fat, the egg is a natural, nutritious food whose benefits outweigh any perceived 'negative' aspects when eaten in moderation and combined with a healthy diet. If someone is concerned about cholesterol or saturated fat, I think they should look first to eliminate it from processed food sources, and hold on to their egg yolks in the mean time.

eggs are like Milk and potatoes. Victims of number discrimination. People think that certain foods are high calories and that's bad. But now that I'm actually counting calories, you know the saying, you gotta "make calories count". That means eating nutrient rich foods like peanut butter, eggs, dairy, potatoes.
My problem is eating a gazillion times the amount I need. Instead of egg and toast, I would eat 3 eggs, meat, cheese, toast and potatoes. (fried)
I'm a fan of the yolk, versatile, mysterious; what's not to love!
Eggs can't reformulate so they've been banished to the same 'dietary death row' as butter, milk, bread, red meat, potatoes.... I think mrsdagle has it about right. There's nothing wrong with any of these foods as long as we don't eat them in enormous amounts.
There's nothing wrong with egg yolk. The whites are just super low calorie.

I eat at least 2 eggs a day...My cholesterol is 126.
My breakfast egg dish includes two whites and one yolk. I'm not discriminating against yolks or anything; I just do it to keep the calories down a little. The extra yolk goes into the freezer, and I use them for making custards and things like that.
Egg yolks actually contain many of the beneficial nutrients of the egg, and without it, they are no longer the "complete protein" that everuone knows them as.
Sure, yolks are high in cholesterol and saturated fat, but I eat 3 WHOLE eggs a day and my cholesterol is perfect. In fact, I had high cholesterol before eating the yolks (how's that for ironic?).
People really need to step back and realize that low-calorie foods aren't always the best. If we were meant to eat one part of the egg alone, wouldn't it already be separate?
My bulk-up diet included 6 egg whites and one whole egg each morning.
My anabolic-rebound diet, for one week, includes nine whole omega-3 eggs a day split up into two sittings.
Personally, I like yolks, and I love them runny. Eggs really are the perfect food.
Yolks are great for hollandaise sauce, creme brulee and custards but murder on my waistline!
Whites only please and I'll doggy bag my yolks for you all! lol![]()

To me, eggs just aren't the same if they aren't yellow. My problem is that I could eat 6 or 8 scrambled eggs and not think a thing of it. So I usually do two whole eggs and two egg whites, it looks like a lot of food (high volume) but eliminating the two yolks cuts down the calories.
And no, I don't waste the yolks! (most of the time at least). I freeze them until I have amassed 8 or so yolks and make a few batches of creme brulee (my favorite guilty pleasure) and have friends over for dinner so I can divy them up and eat just one
