I'm allergic to gluten and looking for some easy meals especially for lunch time. I really don't want to eat leftovers for lunch every day. Anyone have any ideas??? Most of the gluten free websites just try to sell you packaged junk that tastes like crap! Help! I need some new ideas.

Hey...I don't actually have a full allergy, but I'm very sensitive to gluten. My stomach gets pretty upset if I eat a lot of it. I just tend to avoid it, but it's hard where I'm a student and don't have much time or money to invest in cooking gluten-free meals. However...you might want to try some recipes using quinoa, which is a gluten-free whole grain. You can also buy gluten-free flour and bake things from scratch using that. I agree with you about the packaged stuff being mostly crap (tastes like crap and is generally bad for you). I do, however, really like Puffin's cereal, Vans makes a really good toaster waffle that is gluten-free, also all of the Cliff Bar brand things are wheat free. Other than that, I usually just eat a lot of oatmeal, wild rice, and quinoa. (And fortunately for me...I CAN get away with eating gluten things every now and then, but I try to avoid it in general). my mom ate gluten-free for almost 10 years before they found out she was not allergic to it. for lunch she made this salad. it is very easy to prepare and tastes great. i make it myself sometimes...
1 can of drained and rinsed chickpeas
1 bunch of parsley (as much or as little as you want)
cherry or grape tomatoes (as much or as little as you want)
green onions (shallots) (as much or as little as you want)
juice of one lemon
equal amount of oil (olive or other)
garlic (paste or finely chopped)
salt, pepper
salad dressing of choice (optional)
combine all ingredients into a seal-able container (like tupperware) and shake.
that's it.

Wow! Thanks. It is hard for me to find GF foods primarily because of my location. There are only two health food stores within 100 miles of me. And I'm getting board with the same old foods. I've seen that Puffin's cereal but was worried it would taste like the rest of the junk. I'll give it a try this weekend.
