Is anyone else a night cooker?

I started rice in the rice cooker and a stew in the crock pot and beans soaking tonight.  In the morning the stew will be done....night is my typical cooking time because I'm guaranteed to be home once the cooking is done and I don't have to fuss much.

The only thing I cook overnight is bread in my bread machine.  Nothing like the smell of fresh bread to wake up to!!   Rest of the time I use the automatic timer on my oven.  Food goes in in the morning, finished by the time we all get home from school/work in the evening.

Beans I soak and cook en masse. Then they get drained really well before being frozen in a single layer in a large freezer bag.  Means I can then use the cooked beans like frozen peas.  Just measuring out the amount for the dish straight from the freezer.

I once stayed up all night cooking poule au pot in my slow cooker. It smelled so wonderful that I just had to watch it cook and I couldn't go to bed.

(note, I've since heard that you should cut up any chicken cooked in a slow cooker - the cavity heats up to slow for safety)

I often do a crockpot of beans overnight.  That gives me time to cool them and pack them for the freezer without fussing all day.  Most days I'm done and cleaned up by 7 pm.

All day long I can't get up the enthusiasm to cook, not even at dinner, but the urge usually hits around 11 or 12 at night. xDD Very inconvenient. But hey, I just cook for the next day. The only downside is waking up to a pile of dishes.
