I love to eat chicken but I have exausted all my recipes. Anyone have any good lowfat chicken recipes they would like to share I would greatly appreciate it!! Thanks in advance!

One of my faves is super simple.   Bake boneless/skinless breast with topping of orange marmalade, ginger powder and a little kosher salt.  With a side of wild rice, Yum!

Here is a great recipe from Jacques Pepin. I make it all the time and it is great. I adjust the recipe to make it even healthier:

ingredients
  • 3 boneless, skinless chicken breast halves (1 pound, 6 ounces), cut into 1- to 1-1/2-inch cubes
  • 2 tablespoons Wonder flour ( I use regular flour)
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons good olive oil
  • 1 tablespoons chopped garlic
  • 3 tablespoons chopped fresh parsley( I substitute or mix with basil and spinach and I also add chopped zucchini and/or broccoli)
  • 2 tablespoons unsalted butter ( I do not use butter)
  • 1 lemon, quartered
directions
  1. Dry the chicken cubes with paper towels and toss them with the flour, salt and pepper in a bowl. Heat the oil in a12-inch skillet until very hot but not smoking. Add the chicken cubes and cook in one layer turning occasionally, for about 3 1/2 minutes.( after a few minutes I add veggies)
  2. Meanwhile, combine the garlic and parsley in a small bowl. Add the butter and the parsley mixture to the skillet and sauté for 1 minute longer, shaking the skillet occasionally to coat the chicken. Divide among 4 plates, add a wedge of lemon to each plate and serve within 15 minutes.

My favorite, really quick and easy (I've posted it before and people are going to get tired of hearing about it, but here it is)

Chicken Mexicana

4 boneless, skinless chicken breasts, or 1 pound of chicken tenders
1 jar of your favorite salsa

Pour the salsa into a saute pan and heat it up.  Put the chicken on top and spoon some of the salsa over it.  Turn the heat down to a simmer, cover and cook until the chicken is done.

Thank you for the recipes they all sound delicious I tried the chicken with the marmalade recipe it was yummy!! Sorry I didn't realize when I posted this thread there was already one going for chicken recipes...I am new here..forgive me :0)

I know the feeling...I found this one online last week.


Chicken Florentine

2 tbsp plain flour

1/2 tsp salt

1/4 tsp ground pepper

4 skinless chicken breast fillets

1 tsp olive oil

1 packet of frozen spinach (250g, or about 9 or 10 oz)

3 tbsp shredded basil

1 tsp crushed garlic

1/4 cup grated parmesan cheese

This is what you do: mix the flour, salt and pepper in a bowl. Dredge the chicken breasts in the flour coating them evenly on both sides.

Heat the olive oil in a non-stick frying pan, and add the chicken frying it over medium heat. Turn the chicken over once the first side is cooked through or until the sides are done, move away from the heat and cover to keep warm.

Defrost the spinach. Drain any excess liquid. Mix with the basil and garlic. Cook spinach in frying pan for about 2 minutes.

Place 4 equal portions of the spinach mix on 4 separate dishes making the breast in the middle of the spinach.

Sprinkle low fat Parmesan cheese and serve immediately.

IT WAS DELICIOUS! MY BOYS NEVER EAT SPINACH AND THEY LOVED IT THIS WAY.


According to the recipe, the nutritional facts are: serving: 4, Fat 4g, Cal: 222, weight watchers: 4.5 points.

I like to cook chicken in the crock pot with a packet of chicken taco seasoning or italian seasoning.  When it's done, you can pull it apart and use it for salads, sandwiches, or by itself.  Super easy, especially if you're short on time to cook.

Or marinade in a bottle of italian dressing over night.  Then grill just til done and its really tender and juicy.

Accenthealth.com had a good baked chicken recipe that I manipulated to make it even healthier.

  • 6 pieces of skinless boneless chicken breast
  • 1 (5-ounce) package of Melba toast (original or sesame flavor) (scratch this and use TLC crackers OR if you can't have gluten use those rice crackers from blue diamond..yum!)
  • ½ tablespoon rosemary, finely chopped (fresh if possible)
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 3 tablespoons minced parsley (fresh if possible)
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • ½ teaspoon paprika
  • 2 teaspoons garlic powder
  • 3 tablespoons Dijon mustard (or I would recommend eggstarts...sticks better and better on the calories)
  • Light cooking spray
 
  1. Preheat oven to 375&degF.
  2. In food processor, slowly pulse Melba toast until small crumbs. Do not over-process. (I say go nuts on this because man I think when they're finer its better)
  3. Place crumbs in a bowl and add rosemary, oregano, thyme, parsley, pepper, salt, paprika, and garlic powder. Mix thoroughly.
  4. Pat chicken breasts dry and then brush with Dijon mustard. Roll in crumbs to coat (or just dip in the eggstarts)
  5. Spray top of chicken lightly with cooking spray.
  6. Place on rack on top of a parchment-lined sheet pan.
  7. Cook for 35 minutes or until juices run clear.

Ok get this when I did the recipe my way with eggplant it came out to about 37 calories for the breaded eggplant (depending on how big your eggplant is of course) but still if ya get tyson chicken breast it is fairly solid on the low calorie side. My friend loved the chicken version...actually I think my sis did too.




Here is another suggestion. Add some fiber gourmet noodles at 130 calories/18-20 grams of fiber or rice/gluten free noodles, classico tomato & basil sauce, and if you like a lil shredded parmesean cheese. Check it out you have chicken parmesean!



This is a great healthy way to get kids to eat healthy chicken nuggets btw.

Either buy those foil packs or make your own from aluminum foil and place a boneless/skinless chicken breast in and any vegetables to your liking(squash, zuchini, onions, peppers, etc)   add your favorite seasoning and a few splashes of cooking oil ( I don't always add this, depends if I am home or camping).

Close up the foil pack and place on grill until chicken is done.

Only put 1 breast/vegetable mix per packet.

Last night I made my own little "mexican" meal.

Chicken breast sliced up... sprinkle with some chili powder, ground cumin, and squeeze a 1/2 lime over chicken

Heated up about a tbsp of olive oil in a pan... sauteed sliced onion, red pepper, green pepper, cooked until done.

Add chicken and mix it all up and cook until chicken is cook through.

Then add 1/2 can diced tomatoes cook until heated through.

I ate my little mexi fajita mixture on a tortilla, YUM!

Also took a can of black beans mixed in saucepan with can of green chili's seasoned with some cumin, chili powder, and garlic... ate that on the side, also delicious!
