Does anyone have a good recipe for shrimp?
What kind of dish are you looking to make? There are so many great, low calorie shrimp recipes that I don't know where to start.
For instance, you can marinate raw shrimp for an hour in lemon or lime with whatever seasoning you like, skewer them and slap them on the grill or under the broiler. I especially like a lime, cumin and cilantro marinade with a half a shot of tequilla. Add hot pepper as desired.
Or you can make shrimp Florentine by baking them on a bed of spinach with a low fat white sauce.
So many shrimp recipes, so little time!
This is a south beach recipe I tried over the weekend - makes 4 good sized servings
1 T olive oil
1 Medium red pepper, chopped
1 onion, chopped
1 stalk celery, chopped
1 glove garlic, minced
1 t black pepper
1 bay leaf
1 t hot sauce
1 14oz can diced tomatoes
2 pieces of turkey bacon, cooked and crumbled
1 lb shrimp
Saute the peppers, onion and celery in olive oil for 5 minutes. Add garlic and saute 1 minute more. Add undrained tomatoes, pepper, bay leaf and hot sauce, bring to a boil. Reduce heat and simmer 20 minutes. Add shrimp and simmer 10 minutes or until opaque. Remove bay leaf sprinkle with cooked bacon crumbles.
It has only a few grams of fat and 185 calories per serving. Sodium was around 300mg. We served it over brown rice. It will go on my list of favorites to make again.
this is truly amazing....i use the already cooked shrimp that is frozen and it comes out great. it is VERY important to use fresh,not bottled, lime juice! the bottled kind is way too strong for this.i have tried it both ways and the fresh lime juice is important. this is from epicurious.com for "shrimp, tomato and olive cocktail".
another very fast way to fix a low calorie snack is to just thaw out cooked frozen shrimp and make your own cocktail sauce for dipping. mix ketchup and horseradish in the jar to taste.
I'm a big fan of stir-fry shrimp with bottled teriyaki sauce. You can pack it with mushrooms, broccoli, cauliflower, carrots...whatever you like (usually I steam most of my veggies and add them last). Mix in some shrimp (and rice if you have some calories to spare) and it's DELICIOUS! Plus it's very filling and packed full of vitamins ;)
Probably one of my favourite recipes:
Pan-fry the shrimp in a little olive oil with some chopped red chilli, onion and garlic. When the shrimp is almost cooked, add a half-glass of white wine and some fresh, chopped basil, and let it simmer down over a low heat for a few minutes while you cook some pasta (spaghetti or linguine is good with this.) Turn up the heat a little, throw the cooked pasta into the pan and stir it through over the heat so it absorbs the flavours. Quickly stir through some rocket leaves and serve straight away.
