Does anyone know any quick healthy soups?
Hi
i was wondering if anyone knows any easy to to make and quick soup meals. I am a huge fan of soup. My favourites are tomatoe and lentils. I dont have much experience in the kitchen and am often found finding the fastest food option which is normally the quick fire packet thrown in the microwave for three minutes.
Any suggestions would be great..
thank you
One of my favorite and definitely fastest soups (it uses a lot of canned ingredients, so watch out for the sodium):
32 oz beef (or veggie) broth, 1 jar salsa, 1 can corn (drained), 1 can black beans (rinsed), 1 T chili powder, 1 tsp cumin (adjust both to taste), salt and pepper to taste, up to 1/4 c cornmeal to thicken (optional).
Combine everything but the cornmeal in a large pot. Heat 5-6 minutes until everything is hot. Taste and adjust seasoning. If desired, sprinkle in a few T cornmeal while stirring, and simmer another 5 minutes. Serve with sour cream or cheese and tortilla strips as a garnish (baked work well - it's just nice to have something crunchy)
Using homemade stock and salsa (say, 1-2 c) help to cut down on the sodium, and the salsa at least adds extra veggies, but that does take away some from the quickness of it. If you have cooked chicken, pork or beef, you could thow some of that in, too.
I also really like quick lentil soups made with red lentils - I saute some garlic, onions and carrots til the onions pick up some color and the garlic is fragrant, then toss in the lentils, a diced potato or two, and veggie stock. Add salt and pepper to taste, adjust with other herbs and spices, change up the veggies - it's very versatile.
I love ham and potato soups - again start with garlic, onions, carrots and celery, saute with some diced ham, throw in a bunch of diced potatoes/sweet potatoes and cover with chicken or veggie stock. In a separate pot, make a white sauce with 1 T butter, 1 T flour (melt the butter til it bubbles, stir in the flour) and 1 c milk (add all at once, and stir, stir, stir until it thickens). Then, once the potatoes are tender, I add the milk mixture - adds a lot of creaminess for not very much added fat.
I do have a great recipe for tomato and red bell pepper soup that's very low-cal and delicious, but it's a little time consuming, and I don't have it with me. If you want, I can post it.
The nice thing about making soups is that you can make a bunch and eat it all week, or freeze individual portions, and leftovers frequently improve in flavor (although if you freeze some soups, the texture will suffer). So even if a recipe takes a while to prepare, it will net you a number of meals that then only need to be heated up in the microwave.

My family's Polish stew with a turkey twist. Costs about $10 to feed 10 people or 5 people with big bellies!
You would do well adding some sort of beans for extra protein. The men in my life won't eat them so I left them out. *rolls eyes*

I'd approach this differently... Good soup can't be rushed, in my opinion.
So make the soup when you have some time to spare (weekends?), parcel it up into smaller portions for the freezer and then defrost when you need something quick to eat.
I get a stock cube, or miso paste + boiling water. Then I shred up sheets of nori (dried seaweed) and dip/soak it in the soup.
Very low calories, very high Potassium

This is a good tool to use when searching for recipes. You list what you want, and what you don't, and you can also specify what type of dish, cooking method, dietary considerations, etc.
I agree with gi-jane though, good soups can't be rushed :)
I've been making the cabbage soup from the cabbage soup diet lately, though I don't follow that regimen, which basically requires you to eat nothing but the soup all day, I believe. Anyway, it is very tasty w/lots of good veg in it, no fat, and can be very tasty, spicy in fact, if you season it properly.
Basically, it's a head or a half head of cabbage, chopped
1 red and 1 green pepper, chopped
6 spring onions, ends removed and chopped
4 - 5 stalks celery, chopped
2 - 3 large carrots, chopped
2 cans chopped tomatoes
Seasonings to taste, I use pepper (no salt), chili flakes or paprika, rosemary, thyme, oregano, parsley...whatever you like
(You can alter the amounts of the ingredients based on how many servings you want, which veg you like, etc.)
Saute the spring onions in some no-stick spray in a pot. Add the chopped veggies and stir fry for a few min. Add tomatoes and simmer until veggies are softer and flavors have had a chance to mix. You can re-heat whenever and it still tastes great!
If you want something really good and fast, I have found on the supermarkets shelves recently a product called campbells select harvest healthy request soup, that is microwavable. I am always on the go here at work, and have never really cared for any soups, but those are really great and fast. They come in 2 serving size containers. I have tried the Mexican tortilla soup and new england clam chowder. They are mmmm mmmm good! They have been around a little while.
