Anyone know what to do with sundried tomatoes??

Anyone know what to do with sundried tomatoes?? I bought a bag of them teh otehr day and have no clue waht to do with them! Any recipes or suggestion please :)

Chicken with garlic and sun-dried tomatoes

vegetable cooking spray

4 voneless, skinless chicken breast halve

1 1/2 cup thinly sliced onions

1/2 cup finely chopped sun-dried tomatoes

1 can healthy choice recipe creations cream of roasted garlic condensed soup (most of which should have been capitalized, but wasn't.)

3/4 cup fat free, low sodium chicken broth

1/4 cup white wine

1/2 teaspoon salt

1/4 teaspoon pepper

In large skillet sprayed with vegetable cooking spray, cook chicken until brown on both sides. Arrange onions and tomatoes over chicken.

In small bowl, combine soup, chicken broth, wine, salt and pepper; mix well. Pour mixture over chicken. Cover and simmer 20 to 25 minutes or until chicken is no longer pink in the center.

Makes 4 servings. Calories 230, fat 4 g, protein 29g, sodium 450 mg as calculated by teh Favorite Brand Name Diabetic Recipes cookbook.

If they are soft, keep them that way by storing them in a container in the refrigerator.  If they are hard, you'll need to soak them in hot water before using.

Cut them up and add to soups, stews, spaghetti sauce, chili and any other tomato based dish.  They are also wonderful chopped and added to salads and vegetable medleys.

They are very good in pasta, either mixed in with the sauce or just cubed up with some garlic and olive oil.

I also used to make a sundried tomato spread that imitated the one from Breugger's Bagels (if you have those where you live.) I don't know if it was very low call but I made it in the food processor with sundried tomatoes, tomato paste, olive oil, garlic, salt and some diced red onion.  I can't remember if I added anything else, there was never a recipe I just made it up.  It is very good on sandwhiches with some sliced turkey and lettuce!

I LOVE the spread at Bruegger's! I wanted to buy some once, but it was something like $5 for one ounce. I tried to find a recipe for sundried tomato spread online, but I had no luck. I am definitely going to try that combination. Thanks!

Another good sandwich to make with it is hummus plus veggies like cucumber, onion, tomato and lettuce or sprouts. 

yeah I swear they put some kind of drug in it at Bruegger's!

I recently acquired a taste for them and love them too! This is how I have used them/seen them used/would use them if I had time to cook:

with a salad

mixed in with an alfredo pasta sauce or just plain ol' O&V with pasta

chopped up and mixed in with a scrambled egg

soups (minestrone, cream based soups, broth-based soups)

sauteed with asparagus, broccoli, broccoli rabe, ect. 

in an Asian-style veggie & tofu stir fry

blended with chickpeas to make a sundried tomato hummus

on bread crisps with diced olives - sort of like a dryer bruschetta  

in sandwiches

you can make a wrap with a low carb tortilla avocado sundried tomatoe and chicken or turkey and some spinach or greens...and cheese if u want
