We try so hard to lose weight, but its like are stomach gets way too scared to lose any fat and it just keep eating muscle instead when you get low in calories. Why does the stomach keep doing that to us?

it's not the stomach doing it. It's the way a body preserves itself. It's not normal to eat "too little food." Your body needs fuel, and that fuel is food.

If you don't eat enough, your body is going to get rid of tissue that costs a lot to maintain: muscle. Muscle is metabolically more active than fat is, so, eat too little, and you'll lose muscle. Fat will be saved for even leaner (food-wise) times.

If you want to lose fat, you have to eat enough, but not too much. That's why a deficit of 500-750 calories is recommended for safe weight loss.
But it's all relative.  How would one know when they are enough to function?  It's unknown.  It's either one eats too much or too little.
There's a big differential between 'too much' and 'too little'.   Increasing exercise and reducing food intake just slightly is a safer way to lose weight and retain muscle than cutting food back alone.

This might be helpful if you have the time:

For some reason, when I paste this link in it doesn't work.  But eliminate the space in the word "print" and it should work.
