Anyone have a WOW! food discovery recently?

Before I started on this Weight Loss journey, the only way that we ever ate fish was coated in fish fry and deep fried, although so very delicious, not very waist line friendly.

Since I started watching what I'm putting in my mouth, I have been having baked/broiled Tilapia with seasoning about once a week, and it's very good.

But last night, I was craving something, and I found it! I took my tilapia, and took 1 tbsp of cajun fish fry- 20 cals 0g fat, and rubbed it all over my fish, then I heated up a non stick pan and lightly sprayed with butter flavor cooking spray (2 servings I'm sure ;o) I then seared the outside of my fish, and kept flipping until it was done. IT WAS AMAZING, tasted just like when we deep fry it, only better, since it didn't have that greasiness to it! 

I served it with a monster spinach salad, and half a homemade bun. My whole dinner clocked in at less 250 cals and 5g fat, and I was stuffed!

I will definetely remember this way of cooking the fish next time I'm craving something indulgent!

What's your recent discovery that, while still healthy, completely satisfied your craving?

If you notice me anywhere in the foods forum lately- its usually me talking about my current obsession with crab meat. It's sooo good!! I just wish I knew more ways to prepare it!! So if anyone has some suggestions - you can pm me!! [please! i'm begging you!!! Laughing]

Also, the other night I wanted something quick & simple to prepare, I made a chili-lime shrimp that was - to - die - for.

Oatmeal with frozen/dried/fresh fruit, some nuts or nut butter always comforts me on a cold morning. And theres nothing more comforting than a homemade chili or chunky soup.

+ I'm a huge dessert fan. I love yogurt & granola & fruit & nuts. Healthy, yet very, very satisfying.

I have a new side dish I am obsessed with and my daughter loves it too!

We are both vegetable freaks.

1 good size butternut squash washed, peeled, seeded, and cubed

1 med red onion chopped coarsely

put em in a roasting pan and toss with a tablespoon of olive oil and sea salt and pepper to taste.

Roast about 55-60 minutes at 350 til squash is tender take out and toss in a 12 oz bag of raw baby spinach and 1/3 cup of dried cranberries. Put back in the oven about 5-10 minutes to wilt spinach and eat!

Oh we love it! I threw a handful of walnuts in there once or twice too depends on if I decide that is going to be dinner or going to go with dinner.

I love any and all seafood that's always been on my list! Tilapia AND crab meat both totally rock!!!

I've recently discovered that I love:

Frozen mango

Non-fat greek yogurt

Frozen grapes

Unsweetened vanilla almond milk

I recently discovered.....plain COOKED oatmeal!I'd never really cooked oatmeal before, just mixed with milk or water and put in the fridge overnight.

But just cooking oatmeal plain is soooo good! Am i wierd to just love it plain?

 

Other recently discovered WOWs:

-chick peas (so good, and protein!)

-cottage cheese (cant believe I never tried it untill recently, even though I heard so much about it)

-asparagus

plain greek yogurt! yum! i had given up yogurt just because it was sooo sugary and not worth it at all but i tried the Fage Yogurt 0% with just a drizzle of honey and yay!

also

-plain beets

-egg white omelets with tons of veggies

-hummus!!! with veggies

 

mmm the list goes on and on

 YES for Greek Yogurt! This stuff is awesome, not that Light and Fit or Yoplait are that horrible but to cut out those sugars and still have a natural product is awesome!

Also Egg whites and veggie are my #1 Breakfast of choice, I even make them the night before work to heat and eat at the office,I just cant part with such a huge filling breakfast.

Tofupups from Lightlife are 45 calories and FF and taste great grilled w/ some spicy brown mustard!

Hmm Kelp noodles, unsweetened cocoa powder, soy nuts, Fat Free Feta and Brothers all natural dehydrated fruits are great for a low cal crunch!

It's not a recent moment b/c I've been making it for years...

I too LOOOOVEEE fried fish-- especially fried catfish (I'm a southerner).

I take a catfish filet and some cornmeal based fish-fry like Zatarans and put both in a bag and shake it.  You can just rinse your fish first with a little water and that will be enough for the coating to stick.  I don't use eggwash or anything else.  Spray some Pam in a teflon skillet and "fry".  You'll have to watch it and not let it sit too long (maybe 2-3 minutes then flip) because the coating will burn if left unattended for any amount of time.  I usually flip it about 4 times to ensure that it's done and it comes out great.  It gives you that crispy coating on the outside and with some fresh lemon, Tabasco and low-fat tartar, you can barely taste the difference.  I'm sure you could use tilapia or just about any kind of white fish that would taste good deep fried.

I recently rediscovered halibut. Yum.

Dorset Cereals - anyone in the UK tried these? They do really good muesli - no sugar in it, just oats, wheat flakes, dried fruit and nuts

My newest WOW food is my recent breakfast experiment. I mixed tofu, egg whites, blueberries, protein powder and oatmeal in my Magic Bullet then put it in the freezer for a bit. Wow! It comes out like a blueberry mousse! I was also stuffed full for several hours after eating it and the whole thing was under 300 calories. Its the first breakfast meal I've discovered since starting this healthy life thing, that has actually kept me that full for that long.

That sounds intriguing, do you cook the eggwhites before adding them?

Raw Almonds--slightly warm. Unreal. 

 But--NOT "roasted". I was surprised the amount of oil added to roasted almonds. And also-unsalted. A handfull of these is a great snack.

I have been buying Dannon's plain fat free yogurt.

 I use one cup of that (110 calories).... one packet of splenda mixed in... and 1/4 cup of Kashi go lean crunch on top (48 calories)....

 I side that in the morning with a banana and a medium coffee and I couldn't be happier! =)

 

My newest invention.....

Pizza calzone

I take a Lavash flat bread (100 cal) and lightly brush olive oil on it (30 cal), then on half I fill it with ground turkey (60 cal) cooked with lots of onions, some cooked mushrooms, a mixture of motzerella and fat free ricotta cheese (about 100 cal worth) and 2 Tbls pasta sauce (40 cal) Then I folt it over and cook it at 375 for about 10 min...till browned. It is sooo good!!

For my hubby I add his fav toppings, so it is very versitile.

Team Malone, that sounds delicious! I have been making home made pizza for my family, but I'm always lost as to how to count the cals since I'm really not sure how much of what ended up on the 2 pieces that I take. This would definitely take the guess work out of it! That will be this weeks Friday Night Fun Supper! Thanks for the idea!

 

I am so glad you are going to try it :) I kept trying to find something to use for "crust", because that is where so many unnessesary calories come from...so I was really glad to have discovered this works deliciously!

though these probably are not the best for weight loss, i just discovered dark chocolate covered almonds. at least they have antioxidants and good fat.

something i ordered at a restaurant: grilled calamari.. yum!

Chick peas!!! I make mock "tuna" salad sandwiches with them!!! Also dill pickles. I haven't eaten them in so long. I can't eat them alone but cut up on a sandwich is love!  Also better n butter and shirataki noodles! Also white cheddar rice cakes are wonderful. Raw spinach, english breakfast tea, blue bunny ice creams. Lots of new stuff! :-)

Grilled avocado! I do it in a nonstick pan on the stove so I guess it's technically not grilled, but you get the idea. It gets caramelized crisp and nutty on the outside and is nice and warm and creamy on the inside, so good! I like it on a tortilla with halved grape tomatoes, scallions, and a sliced up morningstar (edit: I meant gardenburger) grilled chik'n patty.
