Applesauce based oatmeal cookies perfect for kicking back and reminiscing about those cool Autumnal days. Due to the high amount of fruit puree, the cookies don't spread out during baking and therefore are rather stout (almost like a Russian Tea Cake), but that's just part of their charm!

Ingredients
1/2 cup applesauce
1/2 cup sugar
1/2 cup brown sugar
3 tbsp applesauce
1 1/2 cups all-purpose flour
2 cups oatmeal
1/2 teaspoon cinnamon
2 teaspoons baking powder
1/2 cup skim milk
Directions
  1. Preheat the oven to 375°.

  2. Blend together applesauce and sugars.

  3. Combine the flour, oatmeal, cinnamon and baking powder in a bowl. Alternating with the milk, add the dry ingredients to the batter by hand, a little a time, stirring to blend.

  4. Drop by teaspoons onto ungreased baking sheets and bake until lightly browned, 8 to 10 minutes. Once done, remove and place on cooling rack until suitable for consumption.
