Apple and Onion Stuffing

Holiday stuffing is normally a no-no
when you're counting your calories,
but you can say YES-YES to this
lightened-up swap! 

 



Ingredients

6 slices light bread 

1 tbsp. light whipped butter or light buttery spread Hungry Girl Logo

2 cups chopped sweet onion 

1 cup chopped celery 

1 tbsp. minced shallots 

1/2 tbsp. minced garlic 

1/4 tsp. salt  

4 cups chopped Fuji apples 

1/4 cup minced fresh parsley 

1/4 cup raisins (not packed)  

1/3 cup fat-free chicken or vegetable broth  
(plus more if needed), room temperature  

1/4 cup fat-free liquid egg substitute 

Optional seasoning: black pepper 

 

Directions

Preheat oven to 350 degrees. Spray a 9-inch by 13-inch baking pan with nonstick spray.  

Lightly toast bread slices. Cut them into cubes.   

Melt butter in a large nonstick pot over medium heat. Add onion, celery, shallots, garlic, and salt. Stirring frequently, cook veggies until softened, about 6 minutes.  

Remove pot from heat and stir in apples, parsley, and raisins.   

In a large bowl, thoroughly mix broth with egg substitute.   

Add toasted bread cubes and stir to coat. Add veggie-apple mixture and gently stir. The bread cubes should be moist but not saturated. Add a few extra tablespoons of broth to coat, if needed. 

Transfer stuffing mixture to the baking pan. Cover with foil and bake for 20 minutes.   

Remove foil. Gently fluff and rearrange stuffing. Bake uncovered until the top is golden brown, 10 - 15 minutes. Devour!

 

Makes 8 servings

1/8th of recipe (about 1 cup): 108 calories, 1g fat, 206mg sodium, 24g carbs, 4g fiber, 12g sugars, 3g protein

Wow, this looks like a WONDERFUL recipe!  It will be on my "new holiday recipes to try" list!

I like to think I will try this.  Between my mom and her sisters, and aunt-in-laws, etc.  I've never been obligated to contribute anything to holiday meals (I'm 28).  So I totally see myself saying "Eh, there is going to be so much food, I don't need to bring something else."  Especially since there are always 2 stuffing's anyway (the one with the gizzards - ick, and the one without).  Maybe this will be my year to try to contribute a dish AND make it healthy.  I doubt it will be stuffing, but maybe an appetizer or some sort of side item.  We shall see! ;o)



this is yummy with cranberries as well

 



My grandmother made a stuffing similar to this one and it is SOOOOO good. Her recipe was:

1.  two loafs of marita butter bread (torn up into small chunks, must be done by hand)

2. 2 boxes of jiffy corn bread mix, prepared

3. 4 red delicious apples peeled, cored, and diced

4. 1 med-large onion (chopped) (We don't like onion so we leave this out)

5. mix it all together with your hands and add chicken broth and poultry seasoning until the mix is very moist

6. Bake in the oven at 325 for about 2 hours (my grandmother use to put a turkey leg or two on the top for extra flavor)
