This is so good. Mixtures of tastes are really great. I mix everything together except the lettuce then add the mixture to the lettuce right before eating it. I also add some rasperry vinegarette (spray bottle from Wishbone) dressing. This is really best if you let it set for a while...you know, tastes better tomorrow. Make it vegetarian by leaving out the chicken. This is loaded with healthy omega-3's from the avocado and the pecans, the good fats.
Recipe Ingredients for Apple Pecan Salad
| 8 | ounces avocado, chopped |
| 8 | ounces celery, chopped |
| 5 | large fuji apples, chopped |
| 5 | scallions, chopped |
| 3 | ounces pecans, chopped |
| 14 | ounces canned chicken |
| 2 | large tomatoes, chopped |
| 2 | cucumbers, chopped |
| 20 | cups lettuce |
| 1 | ounce lemon juice |
| 1 | ounce lime juice |
Recipe Directions for Apple Pecan Salad
- Chop first 8 ingredients and mix together in a bowl
- Add lemon and/or lime juice (I squeeze the juice in mainly to prevent browning)
- Place mixture on top of greens.
- Spray or top with dressing of your choice, preferably light and fruity.
