This recipe sounds wonderful to me.  I am going to give it a try.  What you y'all think?

Ingredients:

2 tablespoons light margarine, softened
4 tablespoons unsweetened applesauce
1/4 cup sugar
1/2 cup egg whites
1 teaspoon vanilla
2 cups flour
3/4 cup Splenda granular
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup fat free sour cream
2 cups chopped apples

TOPPING
2 tablespoons chopped walnuts
6 tablespoons unsweetened applesauce
1/2 cup quick oats
1 teaspoon cinnamon
1/4 cup Splenda brown sugar blend
2 teaspoons melted butter

 

Instructions:

1. Preheat oven to 350 degrees F. and grease a 13 x 9 baking pan.
2. Mix the margarine and applesauce in a mixing bowl and add the sugar. Beat well with a mixer. Add egg whites and vanilla, continue to beat well.
3. In a separate bowl, sift together flour, Splenda, baking soda, baking powder and salt.
4. Add dry ingredients to the wet ingredients. Add the sour cream and gently combine. Stir in chopped apples.
5. Spread the mixture evenly into the greased pan. Mix together ingredients for topping and sprinkle topping over batter.
6. Bake for 35-40 minutes or until a toothpick comes out clean.

The sourcream and applesauce make this a very moist cake.

This sounds absolutely delicious to me and healthy too!  I hope it is okay for me to post it here since it was on another site but I really want to make it and I wanted some opinions first.

That sounds soooo good!!!  I don't if my family would like it though and then I'd end up eating all of it.  Frown

The use of fat free sour cream is interesting.  Usually you can't cook with it because it separates, but it won't do that in a cake batter.  I've tagged this one.

I have it in the oven.  I did not use the topping which brings the calorie count down quite a bit.  I'm planning on having some as a snack or dessert after dinner. I'll post the results.

Looks good! But how many servings in the entire recipe?

18 servings @ 86 calories per serving without the topping.

With the topping I think it was 107 calories.

I have already had a small piece and it was delicious.  Would be great with a cup of coffee.

except for the Splenda, that sounds delicious!  If you make it with sugar it would be about 20 calories more per slice (well worth it, in my opinion!)
