Applesauce Muffins (Ada) Recipe

Applesauce makes the muffins tender and moist without overloading them with fat. From the American Diabetes Association. unsweetened applesauce, egg, canola or corn oil, honey, whole-wheat flour, all-purpose flour, baking powder baking soda cinnamon nutmeg, raisins, nonstick spray cvt

Ingredients
1 1/4 cups unsweetened applesauce
1 egg
2 tbsp canola oil or corn oil
1/4 cup honey
1 cup whole-wheat flour (82882)
1 cup all-purpose flour
2 tsp baking powder
3/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/3 cup raisins
Directions
  1. In a large bowl, beat together the applesauce, egg, oil and honey.

  2. Sift in the dry ingredients; stirring just to moisten.

  3. Stir in the raisins and divide the batter among 12 muffin cups coated with nonstick cooking spray.

  4. Bake at 375 degrees F. for 20 minutes.
