What to put on an artichoke?

I love mayo with artichokes, or melted butter and garlic. I know can get a ay with eating about 1 T of mayo with it, but looking for new ideas for dip.

My ideas:

add some plain yogurt to the mayo

add plain yogurt and lemon, and maybe garlic

any good ideas out there?

Yogurt and the mayo idea is good and I have tried that - I just use the non-fat yogurt with the low fat mayo (non fat mayo tastes bad - to me anyway).  I like to put just a little (and I mean little) bit of curry in the dip. 

Also I like to use a little bit of real butter with lots of lemon juice and maybe a little dried dill.

I like them with lemon juice and a pinch of salt.  The tart/salty taste complements the artichoke perfectly.  No need for any fat or creaminess at all.

Hubby uses the lower fat Mayo for his sandwiches and I've found it a good sub for regular mayo and you can use a little more of it.  Honestly, I've tried the yogurt thing in other uses and I just don't like it.

I think you have a good idea with the spices though, perhaps a little garlic powder?  Or cayenne??  Tongue out  Now I want an artichoke!!

my moms recipe... amazing with articokes.. but also good with meat... a 1/2 mayo, juice of 1/2 a lemon, about a tablespoon tumrick, garlic powder, salt, and pepper to taste (also more tumrick to taste)(it will be about the color of mustard). I know not healthy or lowfat... but sooo good!

mmm....  i love artichokes!  i could eat them all the time.  i was never a mayo person so i love it with just plain ol salt.  if you have to watch your sodium intake, might not be the best, but for me..its soo good.  and artichokes are filling and not very high in cals..so its like the perfect food.  i boil or steam them in water with a pinch of salf, lemon juice and italian herbs... mmm...maybe ill have another tonite..

sort of a gross,  but related question.. do artichokes make anyone um..gassy?  the next day?  or bloated?  maybe its just me, but im pretty sure its related somehow, but it wont stop me from eating them ;P

I make bruschetta

Artichoke hearts, garlic, roasted red pepper, olive oil, salt/pepper.

toss all in food processor, pulse...I like mine slightly chunky

I haven never ever heard of putting mayo on an artichoke!

My family makes artichokes the Italian way. Lots of garlic, parsley, bread crumb and EVOO mix that all together then stuff the tops. put them in some water in a pot and steam them for like an hour. omg amazing.

I cant ever find a nice artichoke to them them though. =/

I make a cucumber dip that I like to use with fish, and to dip veggies in, it would work well with artichokes.

I just take fat free sour cream, lemon juice, garlic powder, dried dill weed, and salt and mix it in a bowl, then I peel cucumber and use a box grater to grate the cucumber and then mix together.  You can make any amount you want that's why I don't ever measure anything, I just add a little of everything and keep testing it until it has the flavor I like.  I put it in the fridge over night before I use it, it seems better that way.

You could always leave the cucumber out, and just have a creamy dip, if that's what you're looking for

I use the spray stuff (Can't Believe it's not Butter)  The bottle says 0 calories per spray, but Jullian from The Biggest Loser says to count each spray as a point.  I can hit about 4 leaves with a spray.  I usually only add about 20-25 calories to the artichoke this way.  I use it on corn on the cob too. Smile

make a little Italian salsa verde with extra virgin olive oil, herbs (fresh parsley, basil, oregano), and capers, salt and pepper...blend in food processor and use as a dip.
