Excellent; the flavor "pops" in your mouth. Be sure to use all fresh ingredients, including fresh grated Parmesan cheese.

Recipe Ingredients for Arugula and Parsley Pesto

3 cups arugula, fresh
1 cup parsley, fresh
2 cloves garlic
1/2 cup walnuts
1/2 cup olive oil
1/2 cup parmesan cheese

Recipe Directions for Arugula and Parsley Pesto

  1. In food processor, chop garlic, add the walnuts, pack in the parsley and arugula, pour in the olive oil gradually while processing.

  2. When a paste has formed, add the cheese.

  3. Serve on bruscetta, crackers, bread or with raw vegetables as a dip.
