| 1 | courgette |
| 4 | tbsn oil |
| 1 | garlic clove |
| 1/2 | onion |
| 75 | grams mushrooms |
| 2 | tspn cinnamon |
| 1 | tspn coriander, ground |
| 1 | tspn cumin |
| 1 | tspn turmeric |
| 2/3 | cup water |
| 200 | grams passata |
| 1 | tbsn tomato paste |
| 80 | grams potatoes, new |
| 200 | grams chickpeas |
| 5 | dried apricots |
| 1 | fresh coriander |
| 2 | cup cous cous |
Recipe Directions for Aubergine (Eggplant) and Chickpea Tagine
- chop aubgerines and courgette into 1 inch cubes. Grill in 2 Tbsn oil for 20 mins, turning until golden
- Saute onion and garlic, add mushrooms and spices and stir
- add potatoes, water, tomato passata and puree. simmer for 10 mins until potatoes soft and sauce thickened.
- Add half a tin of chick peas, aubergine, courgettes and apricots. Heat through for further 5 mins.
- Serve with cous cous and fresh coriander.
