So a healthy food alternative, eh?!

Has anyone tried to substite Mayo on their sandwiches with Avacado? Great alternative- healthy fats- the moisture your looking for- and what a great taste.

My fav-

2 slices light bread- 45 cal each, Large leaf of Romaine Lettuce-crisp-Alfalfa Sprouts- 1 slice Swiss Cheese (thin sliced- 50 cal), and 2 slices uncured lean Ham, and of course 1-2 tbls of Avacado!

Still under 300cal and Fantastic!

Avocados are delicious.  Unfortunately, being a singleton, if I use a little avo on a salad or sandwich I'm left with the rest going steadily brown in the fridge.  So if I have friends over for supper, guess what's on the menu!?
^ Someone here told me to put a bit of lemon juice on what's left over and exposed.  It does keep it from turning brown long enough for me to finish it.

I love avacados.  I used to hate them to death but Alex got me to love them.  I put them on sandwiches, in omelettes, with cottage cheese, or just eat them.  I'll only get an avacado once every few months 'cause they are pretty expensive, but they're so good.

yesterday I had one slice of whole wheat toast with two slices of deli turkey and a few paper thin slices of avocado, it was less than 150 calories and SO filling

I will put avocado on anything! Salads , veggie burgers, on their own you name it.  Recently, well a few weeks ago I bought a few avocados that still have not ripened.  VERY WEIRD - usually by now they are moosh.  Any tricks to get them to ripen faster?  I have been wondering if the brown paper bag trick will work ...

(oh, and b/c i love gadgets,  i had to buy the avocado pitter and slicer at williams-sonoma,   it really doesn't do anything you can't do with a knife, lol - i just could not help myself)

Put your avocados in a brown paper bag.  That will help them ripen faster, bananas too!

If you want to keep half an avocado for the next day with out it getting really brown. When you cut it in half save the side with the pit in it.  Don't take it out of that side til you are going to eat it. Plus if you use a little lemon/lime juice like someone else mentioned it should be fine for the next day!

Oh and as far as ripening....never put them in the fridge...same as tomatoes.

I love avocados....it is such a shame that they are so high in calories though.  I could eat a whole one straight from the peel when they are ripe

I tried this for dinner.  Delicious!!  I had a pita burger (turkey) with avacado, alfalfa sprouts, romain, tomato, pickles.  I'll be putting the avacado on everything now, its a good replacement for mayo.  IMO.

Another tip to ripening is put them your flour container, covered with the flour for a day or two.

Also, to go along with the brown bag trick, add an apple to the bag.  Apples give off a gas as they ripen that causes other fruits to ripen more quickly.  Some other fruits do this too, but I can't remember which ones off the top of my head.

Every 2 weeks or so, I switch up my sandwiches that I take to work and use avocado as a spread (rather than lf ricotta which I normally do). I cut the avocado into little pieces (almost to the point of mashing it) and spread it on one slice of whole wheat bread. It's delish and one avocado makes about 4 sandwiches. I also add spinach, tomato and carrots, so it's pretty much a veggie sandwich.

 

Tricks to avoid browning of the leftover avocado -

1. Use the half without the pit first and keep the pit intact on the half that you plan to save.

2. Sprinkle lemon juice on the surface.

3. Cover surface with plastic wrap as tightly as possible, so that the smallest amount of air can get in (exposure to air is what makes it turn brown).

4. Then put in a ziplock bag, and store face down in the fridge.

Usually I get a little browning even still, but it's just on the surface and can easily be cut off. The remaining "flesh" is brown-free! Yum. Then I can make 2 more sandwiches with it..

2 weeks ago I ate 1/2 an avocado.  i put the other half in those new green bags that are supposed to keep veggies fresh longer.  well, i forgot about the avocado and found it 1 week later.  It was still perfectly green and fresh. 

Its nice to hear that these work well. I will have to purchase a few. As an avid avacado eater i need to make them last as long as possible so that they do not go to waste and i do not over-eat on  one day!

Good idea! But avocados are really expensive, so I usually use hummus or low fat (but extremely rich tasting) sour cream, and it's delicious! Smile You can try that too as a cheaper alternative.

To get them to ripen faster, put them in a paperbag with a banana.  Once they're ripe, put them in the refrigerator to keep them from rotting.

Do keep the pit in if you don't want it to go brown, same with homemade guacamole, keep a couple of the pits in and it stays green much longer.

for those who prefer something sweet, drizzle honey on avocado with 2 slices of bread, and you have an avocado sandwich.

I guess where I purchase my avacados they really are not all that expensive. Actually- I believe that hummus and sour cream might actually be more expensive.

I don't like sour cream- and hummus only with veggies.
