This delicious, vegan soup gets its smooth and creamy taste and texture by the addition of avocado instead of cream which is not only not vegan, but also high in saturated fat.

Recipe Ingredients for Avocado and Summer Squash Soup

2 teaspoons olive oil
1 medium yellow onion
1 garlic cloves, minced
3 small zucchini, quartered
3 small yellow squash, quartered
2 stalks celery, chopped
1/2 cup low sodium vegetable broth
1/4 cup water
1 medium avocado
1/4 teaspoons dried dill or 1/2 teaspoon fresh dill, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/8 teaspoon cayenne pepper

Recipe Directions for Avocado and Summer Squash Soup

  1. In a 4 quart stock pot, saute' onions and garlic in olive oil until transparent.

  2. Add zucchini, squash, celery, dill, salt and pepper.

  3. Add water and broth and simmer until veggies are soft.

  4. Put all of half of veggies in blender (your preference: smooth or chunky). Add one avocado. Blend. Add more water if thinner or smoother consistency is desired.
