i mashed one up, mixed with some cream cheese and has in a sandwich
so does anyone else know of yummy ways to use them??
Mash up the avocados, add a squirt of lime juice, a minced habenero (or similar) pepper, a finely chopped roma tomato, and some minced onion...voila--guacamole.
Don't make too much at a time--it doesn't keep well for more than a day.
Also good as a salad--just slice it and lay it over mixed greens. It's more filling than a veggie-only salad, IMO.
A few of my avocados uses:
-Veggie salads
-Sandwiches
-Pasta or couscous salad (combine whole wheat couscous, tomatoes, cucumbers, avocadoes, and italian dressing- amazing)
-Tacos, enchiladas, quesadillas, or anything Mexican
-Puree with some yogurt for a veggie dip
-Quiche
-Pizza
-Gazpacho soup
-Fruit crepes (avos go surprisingly well with berries, imo)
-"Hobos"- campfire-style tinfoil dinners
-Stuffed peppers
-I'm sure I've used them in other ways I can't think of right now . . .
Can you tell I like avos? :P
I read to use them in place of a "fat" on a sandwich, so I spread a little avocado onto my bread when I make a sandwich. It's awesome on some good heavy bread, a few slices of tomato and nice turkey... mmmm
Go to an EMart type store (Emart, Homever, etc). They have them year-round. They're not usually ripe but just put them in a paper bag for a few days.
I mash up with a bit of salsa, salt and lime for a quick guacamoli
You can also use avocados instead of dairy in desserts. I have seen recipes for avocado ice cream and chocolate mousse made with avocados.

If you want to make your guacamole last longer, leave the pits in. I don't know how it works, but it does!
Mmm, love avocados! They're great mashed up with a little salt and pepper, or garlic salt and spread on bread in sandwiches. Or, mix in some salsa, salt and pepper, etc for easy guacamole. If you squeeze in some lemon or lime juice, it helps to keep it from turning brown.
Also great sliced up in salads or wraps...
I tried fried avocado at the fair one year.....it was nasty :)
