I go this from the hungry girl web site. I threw some shrimp, red bell peppers and cajun seasoning into the bowl and had cajun shrimp alfredo. Delicious, cheap, low calorie and takes less than five minutes.

Yes, you can buy the Shirataki noodles at Whole Foods in the refrigerated section (with the tofu), sometimes at Trader Joe's, and also online (when they're not sold out).
The Laughing Cow cheese I'm able to find at any major grocery store in the Chicago area. Not sure about its availability elsewhere.

laughing cow cheese i get at either trader joe's, or pavilions (which is also Vons). they'll have it for sure. If you cant find it, ask someone!
You could also use spaghetti squash with this sauce.
