Agreed! That beautiful mushroom also makes one fabulous fajita. Just marinate it for an hour or less in balsamic vinegar and a ton of garlic. Grill, slice and stuff them in a whole wheat tortilla with some sauteed sweet red pepper, onions, and salsa! You can also just use the portobello to "extend" the steak you do add. I marinate the meat and portobello (separate bags) so carnivores, vegetarians, and omnivores can choose what they want! A nice avocado and tomato salad on the side....yum!

ps - they do up nicely in a George Foreman grill too.

I like to add some hummus into the cavity of the mushroom before topping it off with the feta cheese.  Turns out amazing every time - delicious with a side of steamed (or grilled) corn and spinach salad! 

do you grill the mushroom with the hummus or put it in after it is grilled?

I grill it top side up (cavity down) first, then flip it over and fill the cavity, adding the feta.  I let it finish grilling, allowing the hummus & feta to get warm and gooey.  Works very well with balsamic marinated mushrooms (like the ones you mentioned), or even just plain with a sprinkle of lime juice at the table!  :)
