REALLY awesome aubergine and prawn curry - 150 cals. Hello new favourite recipe!

I just made this for the first time and Oh.My.God. Actually tasted like it was from a takeaway or something I swear! This recipe could also be adapted to add any meat/vegetable to make it suit your taste, but I used:

1 large aubergine diced in 1inch cubes

100g cooked king prawns

0.5 white onion, finely diced

2 cloves of garlic, crushed

1tsp of vegetable bouillon powder in 100ml of boiling water

1tsp turmeric

3tbsp tomato purée

2 tsp curry powder

(chilli to taste - optional. I didn't use this, i'm not a fan of too much heat)

Pam spray (or similar) as required

 

Method:

1. Heat Pam in a pan and add the onion and garlic. Fry until softened

2. Add the tomato purée and continue to cook until it goes "mushy". Then remove from the pan and put in a jug with the boiling stock and blitz it to give th sauce

3. Add the ground spices and aubergine to the pan with some more pam spray to stop it from sticking. Coat the aubergine thoroughly in the spices and let it start to soften.

4. Finally, return the sauce to the pan and bring to the boil. Allow to simmer for 15minutes until the aubergine is thoroughly cooked and soft. Add the cooked prawns towards the end to allow to heat through.

 

Serves: 2 as a main course, maybe 4 as a side.

 

I literally can't get over how "takeaway good" this tastes.

At 150 Calories per serving I would classify this as an appetizer not the main course. Now if you make it in to 1 serving, 300 Calories, throw in a salad on a side, some rice or legumes then sure.

Hmm, well I had my serving with some boiled rice and it was plenty for me for my dinner last night, and my mum had the same and was satisfied. Another idea would be to drop out the prawns and put a tin of chickpeas in instead!

Sounds yummy I'm going shopping tomorrow will get some aubergine and try it, I agree though with rice and some lime pickle it would be a meal for me not a starter.

I tend to have 4 to 6 'meals' a day of between 150 and 300 calories so this would be great for a winter evening.

I will definitely be adding the chiki though I like a bit of spice :o) thanks for hte recipe
