BACON WRAPPED APPLE BARBEQUE CHICKEN (slow cooker recipe)
This recipe is in All*You Magazine this month. I haven't tried it, but it looks good. 279 Calories per chicken breast (4 servings). If you try it let me know if it is as good as it sounds.
1/2 cup barbecue sauce
2 apples, such as Granny Smith, peeled, cored and grated
Juice of 1 lemon
4 boneless, skinless chicken breast halves (about 4 ounces each)
8 slices of bacon
salt and pepper
Combine barbecue sauce, grated apple, and lemon juice. Rinse chicken breasts and pat dry. Wrap 2 pieces of bacon around each chicken breast half. Place wrapped chicken in slow coooker and top with BBQ sauce mixture. Set slow cooker to low and cook for 8 hours. Season with salt and pepper and serve.

Doesn't it? I am anxious to try it, especially at only 279 calories a serving. And it looks so simple. (except grating the apple, I don't have a processor, that would make it simpler.

2 questions: First, how finely do you grate the apples? Second, I cook for anywhere from 3 (with 2 teenage boys) to 7 (adding more teenagers as I go) so do you know if this is a recipie that doubles or even triples well? Some don't.
Otherwise it sounds delicious and it is nice to see something low calorie that includes bacon in the title.

The recipe doesn't specify. I assume like the large grate on the grater. I don't know about doubling the recipe. You might experiment some weekend. You can't hurt the chicken I am sure, but the rest of it...I don't know.
