Can you bake with cottage cheese ?? post your good recipe here

Quote  |  Reply

Last time I tried to cook cottage cheese, it was a bad experience. the smell was bad and I threw the whole thing away. Just wondering if I can use cottage cheese in the oven for pie fillings or any fillings ideas.

I use friendship cottage cheese 1% fat.

Can I bake cottage cheese in the oven? what are some good simple ideas?

Thanks:)

I made a  blueberry clafoutis once.  It was so good, I ate the entire pan in 2 days, so I decided not to make it again until I got my bingeing under control.  :)

One warning, it does look funny when it comes out of the oven and cools, but it is yummy!  Also, I used 1.5 teaspoons of splenda.  It is just in the recipe as 1.62 g of granulated sugar because I couldn't find any other way to get the calories in there for it.

May I add a savoury recipe? I enjoy cottage cheese in Crustless Quiche/ Frittata.

6 eggs

1 cup cottage cheese

1 cup ANY veggies you like (spinach and mushrooms? MMM)

1/2 cup left over meat (opt.- I don't add it)

1-2oz cheddar cheese (opt.)

Add all the ingredients and mix it all up. Add some fresh salt, pepper and herbs to your taste. Place it in a pie pan, or oversafe skillet. Top it with some cheddar cheese, if you'd like. Bake it for 25 minutes at about 375 degrees. Makes 4 very, very generous servings.

thanks so much , ladies.

Vron, I would love  to try your recipe but 6 eggs??that sounds a bit too much for one cup of cottage cheese. if I add less eggs, will that change the flavor? I may add 1 egg and 1/4  or 1/2  cup egg whites to one cup of cottage cheese. what do you think? I use 1% fat. is that ok? I heard that I might need to avoid non fat in baking.

Def, I will try this. I am just scared that last time I tried to put cottage cheese on the stove, the smell was so bad and the taste was weird. I used friendship cottage cheese.

Kaffwynn, this is absolutely delicious. I will have to try it. can you help me to make half of this recipe. I have a binge problem. not much luck with self control.

more recipes please :)) I will tag this for sure.

I use 1%. With 6 eggs, you don't taste the cottage cheese very much but it makes it lighter, and adds the sodium. Of course you could replace ALL of the eggs with egg beaters, or replace 2 eggs with 4 whites etc. If you still want to use 6 eggs- add more cottage cheese! This isn't a strict recipe where deviation means failure- quite the opposite. You like more of this or that? Add it!

thanks. I will try this on the weekend. I will post here to report:)

oh. an important question. how do you mix them? by hand or electric mixer? I have an egg beater. is it ok?

I crack all the eggs into one bowl, mix them thoroughly with just a fork. Then I add the cottage cheese (try 2 cups!?), mix a bit with a fork, add the extras and pour into a sprayed, buttered or nonstick pan. I top it with cheese and pop it in the oven. Couldn't be simpler! It's a student's dream :D

It's not baking, but I've been enjoying protein pancakes lately.  You can find plenty of recipes out there, but a basic one is:

1/4 cup oats

1/4 cup cottage cheese

3 egg whites

1 tsp sugar (optional)

Toss it all in the blender and cook on a skillet.  They're pretty tasty with some SF syrup and of course you can try normal pancake variations like adding blueberries or other fruit

quintanion, I will make this on the weekend. Sounds delicious:)) Thank you.

you know, I am just afraid the cottage cheese will turn bad like last time. The smell was terrible and it was all curds. what brand do you use? I eat friendship cottage cheese.

Cottage cheese IS curds.  The lower the fat the less creamy.  I cook (bake) with cottage cheese in place of higher  priced ricotta all the time!

I know it is curds. I just don't know why it does smell bad when cooking.
