A quick and easy italian-inspired meal infusing chicken, vegetables, and potatoes into a tasty casserole.
| 2 | lbs. chicken breast fillets |
| 4 | potatoes, cut into chunks |
| 2 | small pimento peppers, sliced |
| 2 | carrots, peeled and sliced |
| 2 | tbsp. parsley, chopped |
| 2 | tbsp. basil |
| 4 | tbsp. garlic powder |
| 13 1/2 | oz. stewed tomatoes, italian style |
- Preheat oven to 350 degrees.
- Season chicken pieces with garlic powder and basil to taste.
- Slice, cut, and prepare vegetables. Then place vegetables in casserole dish. Season lightly with garlic powder, basil, and parsley; mix well.
- Top with chicken pieces.
- Crush stewed tomatoes and pour over casserole.
- Cover and bake at 350 degrees for 35-40 minutes.
