Baked Italian Chicken Casserole Recipe

A quick and easy italian-inspired meal infusing chicken, vegetables, and potatoes into a tasty casserole.

Ingredients
2 lbs. chicken breast fillets
4 potatoes, cut into chunks
2 small pimento peppers, sliced
2 carrots, peeled and sliced
2 tbsp. parsley, chopped
2 tbsp. basil
4 tbsp. garlic powder
13 1/2 oz. stewed tomatoes, italian style
Directions
  1. Preheat oven to 350 degrees.

  2. Season chicken pieces with garlic powder and basil to taste.

  3. Slice, cut, and prepare vegetables. Then place vegetables in casserole dish. Season lightly with garlic powder, basil, and parsley; mix well.

  4. Top with chicken pieces.

  5. Crush stewed tomatoes and pour over casserole.

  6. Cover and bake at 350 degrees for 35-40 minutes.
