Recipe Ingredients for Baked Pumpkin Pie Oatmeal

15 oz Pure Pumpkin
1/2 cup, unpacked Sugars, Brown
2 large Egg, Whole
1 tsp Pumpkin Pie Spice
1/2 tsp Salt, Table
3/4 tsp Baking Powder
1/2 tsp Vanilla Extract
1 1/2 cup Milk, Nonfat, Fluid
1/2 cup Plain Nonfat
2 1/2 cup dry Old Fashioned Quaker Oats

Recipe Directions for Baked Pumpkin Pie Oatmeal

  1. Preheat oven to 350

  2. Whisk together pumpkin, brown sugar, eggs, vanilla, spices, and baking powder until smooth

  3. Whisk in milk and yogurt

  4. Mix dry oats into mixture.

  5. Coat 8x8 pan with non-stick spray. Pour in mixture. Cover with Foil and bake for 45 min, removing foil after 30 min.

  6. Serve hot out of oven or refrigerate until ready to serve. Can be eaten cold or reheated.

  7. Top with milk, maple syrup, whipped cream or nuts.
