Baking with protein powder?
I have recently started drinking a glass of vanilla flavoured soy protein powder, but am interested in using it in some different ways. Can some of the flour in a cake or muffin recipe be substituted for protein powder? Anyone have any success?
dondons, I wouldn't use protein powder for baking as it changes the taste of it. there was a thread a while ago about baking with protein powder and I read that it is not recommended. but that is just me.
You might want to check the nutrition forums over at bodybuilding.com. I used to frequent the boards there, and this was quite the hot topic a few months ago. I believe the overall consensus was that cooking protein powder 'denatures' the protein, but so do processes like digestion. In the end, it didn't impact the ability of your body to use the protein as a protein.
Honestly, I make a 'one minute muffin' with protein powder all of the time, and am quite fond of it!
I use a soy protein powder (unflavored) and replace some of the flour in certain recipes with it -- it tends to make things more dense, but I don't notice the taste, and it makes things super filling... especially when combined w/ whole wheat flour :)

Yup, I bake with it EVERY DAY! And I've come out with some delicous recipes too... I'll post my "muffin" that I just finished eating for you to try out... it's really good, and you can get so creative with protein powder. Just use it in place of flour wherever you please (best suite for "sweeter" recipes though, idk if I'd like eating protein-powder mac and cheese lol!)
- 3 TBS Designer Whey Vanilla
- 1 TBS Yogurt
- 1 TBS Applesauce
- 2 TBS Eggbeaters
- 2 Packs Splenda
- 1/4 TSP Vanilla
- 1/8 TSP Baking Powder
Mix contents thoroughly in microwave safe mug. Microwave for 1 minut, 30 seconds. Enjoy!
