(adding nuts instead of chocolate chips, making smaller portions, substituting egg whites for whole eggs, etc):    subbing egg whites, using pumpkin or applesauce as a sub for butter or oil, adding a sprinkling of wheat bran or milled flax seed, reducing amount of chocolate chips or high cal additions

11) do you/why do you like to bake?:  I like eating the stuff afterwards - and it provides a creative outlet.

12) where do you store baked goods after you've baked them? (container, freezer, etc): both container and freezer (depending on whether or not I think my family will be eating them.)

9) have you started trying to bake lighter/healhier since joining cc?: I prefer the real thing, just smaller portions.  Somehow "healthy" baking just doesn't make the grade.  However, I do make things like banana bread with little or no fat because I prefer the texture that applesauce gives to the product

12) where do you store baked goods after you've baked them? (container, freezer, etc):  It depends on what it is and how fast it will be eaten.  I store leftovers in the freezer

14) where do you find your recipes? (cc, cookbook, family, own creation): Mostly cookbooks.  For desserts I like the Pie and Pastry Bible, James Beard's American Cookery, and The Better Homes and Gardens Cookbook

 9) have you started trying to bake lighter/healhier since joining cc?: No I was already doing that.  I've been reajusting recipes for a while now.  Like with the biscuits yesterday, instead of shortning I used  Smart Balance Butter.

 10) what's your favorite way to make a recipe lighter/healthier? Its usually changing what kind of fat I use.  Like in my Sourdough Bread, instead of butter or shortening I use 2 tbsp of Olive Oil.

 11) do you/why do you like to bake?: I love it.  I don't know why, I like to bake its just soothing some how.

 12) where do you store baked goods after you've baked them? Usually on a plate wraped with plastic wrap.  Everyone eats it to fast to freeze.

(adding nuts instead of chocolate chips, making smaller portions, substituting egg whites for whole eggs, etc): I'm not a fan of making recipes lighter, if i feel like having something healthier i just use a recipe thats naturally that way, like macaroons, or bran muffins.

11) do you/why do you like to bake?: I don't know, its relaxing, and fun, It allows me to be creative.

(cc, cookbook, family, own creation): I enjoy creating my own ideas and recipes, often i will look online or in a cookbook for an idea and then use one of my own recipes. I also use cookbook recipes, but i'm a little wary of online recipes, unless they come from a reliable source like foodnetwork or something.

15) what's something you've never baked before, but would like to?: Apple Strudel, its probably my favorite thing in the world, which is why i havn't baked it, if i learn how to bake it i'll gain like a million pounds.

Gosh I was so small I would have been 4 or 5 years old... hard to remember- but probably cookies or cupcakes

I live on my own at the moment (kicked the stupid ex out after Easter...) so no... but both my Mum and my sister bake as well as my Grandmothers etc. In our family baking is a huge tradition

No. I have always baked quite sensibly and healthily. Since joining CC I have been trying to not only bake for others but for myself and to enjoy in moderation and not binge. I'm learning  to balance. (I used to either restrict or binge)

I like to use wholegrain flour...
oats....
unprocessed sugar...
I almost always reduce the sugar in the recipe (have always done that)
but for me moderation is important-  I want and deserve to enjoy life and to treat myself with respect as well as to treat myself to a treat- which I know was made with good wholesome ingredients as well as love. Sod the fact that it has a bit of butter in it. It's all about balance!

It relaxes me.- It makes my kitchen smell homey and comforting - It makes me feel safe - I love my friends and family and like treating them to special things -

Last year when I got the job of European Marketing Services Coordinator for the firm I work for... my Mum went out and bought me a really beautiful cake tin. She then baked me a traditional English fruitcake- as a congratulations present. I always keep my baked treats (cookies, cakes and muffins) in there... Bread in my Bread Tin... I have a pieplate for pies... And I make gift bags and plates for my friends

cookbooks, net, create my own, family recipes, magazines... If I come across a recipe I think is worth trying I will try it.

9) have you started trying to bake lighter/healhier since joining cc?: Of course. :) Substituting apple sauce/olive oil instead of margarine and butter is one of the things I've done.. using flax instead of eggs, nuts instead of chocolate, stevia and splenda instead of sugar.

If it's a large batch of something that will last me the month or so, I freeze it. (Usually things last me a long time because nobody else will eat it. :'( )

2) where/from who did you learn to bake?: My grandmother, when I was two years old, let me help with the chocolate chip cookies for our Family Reunion. She showed me how to measure the flour and cream he butter. Good times....

Yes. Think whole-grain flour, unrefined organic sugar, wheat germ, banana puree for sweetness....

11) do you/why do you like to bake?: I love to bake....probably because the science of it fascinates me. I once read part of a book on baking, and it told you what the eggs and baking soda do....It was actually quite interesting.
12) where do you store baked goods after you've baked them? (container, freezer, etc): For the first 5 days, I store them on a glass plate covered with tin foil or Saran Wrap. Then, ones that aren't eaten go to the freezer.

13) do others think you bake well?: Yes. I made healthy blueberry muffins with wheat germ, oat bran, blueberries, banana puree and whole-grain flour and got my brother to eat one wtihout telling him they were healthy. Boy, was he surprised.
14) where do you find your recipes? (cc, cookbook, family, own creation): All four- cookboooks, I make some up, some are family recipes, some are off the internet.

15) what's something you've never baked before, but would like to?:Some select muffin recipes, corn tortillas, ad pita bread. While, I have tried pita bread, but it didn't turn out so well.  So I would like to try it again.

2) where/from who did you learn to bake?: My mom has several "secret ingredients" that she likes to add to certain baked goods, so I learned those, but I'm mostly self-taught.

6) what was the worst thing you've ever baked?: I made these crescent rolls stuffed with a peach preserve mixture. That ended up being the richest thing I'd ever tasted. No one in my family wanted to eat them.

15) what's something you've never baked before, but would like to?: I'd like to make more pies, cobblers, cakes, and other messy things that you can't slice into a square, wrap up and sell.  At the coffee shop where I work, no one wants anything pretty.  They just want something they can grab and stuff in their face or their purse for later and they want it to be full of delicious fat and sugar.

10) fave way to make recipe healthier/lighter- replace white flour with 3/4 whole grain, 1/4 white.... replace oil with applesauce... replace 1/2 of the chocolate chips with raisins/craisins
11) i LOVE to bake!!! i dunno why... i used to love to eat the batter lol but id end up eating so much! i didnt used to realize at teh time but thinking back i probably ate like 1000 calories while i baked!  it wasnt a weight issue cuz im thin and would be good otherwise but it was terribly unhealthy... now i try not to eat it at all while i bake- if im really tempted ill take off a spoonful and not eat it until all the rest of the batter is in the oven or sink- but i still love baking... i guess i just have a strange obsession with feeding people
12) where do u store baked goods after baking?- depends what i baked for... if im serving it the next day/that day, ill wrap it in silver foil (cookies i put on a plate and in a ziplock) and leave it on the counter.  otherwise, i do the same and put it in the deep freeze.

7) what's your favorite thing to add to baking? (sprinkles, chocolate chips, dried fruit, nuts): Coconut and different "chip" varieties. Peanut butter chips, white chocolate chips, mint chocolate chips... it's fun to experiment with basic recipes.

I've always been more of a fan of heavy, dense baked goods, so these just work to my advantage!

11) do you/why do you like to bake?: Good question. What's not to love? I take a bunch of random ingredients and turn them into something delicious. It makes me happy, it makes the people eating the stuff happy... I like to make people happy.

12) where do you store baked goods after you've baked them? (container, freezer, etc): Usually a plastic baggy or plastic wrap. Depends on the size and what-not.

13) do others think you bake well?: Never had a complaint. In fact, I'd say I've gotten more, "Would you please make this again I'll give you grocery money!" Tee hee that made me happy.

like biscuitte...and just before serving top it with fresh strawberries and withfat-free yoghurt (add a little bit of honey or sugar, and i allways give a smashed banana too it..but i love banans ;) .
