mmmhmmm. My husband made this for me last night after we got back from the gym when I wanted something protein-y but light. We both loved it.
Sundried Balsamic Chicken
1 large chicken breast
4 spritzes extra virgin olive oil
3 tbsp balsamic vinegar
1 tbsp dry (marinated usually are higher in cal. and salt) sundried tomatoes (regular old dried tomatoes okay)
sea salt to taste
freshly ground pepper to taste
Instructions:
Turn stove onto med heat (4). spritz oil into pan. Place chicken in pan. In separate bowl, combine balsamic, tomatoes, salt, and pepper. Pour mixture over cooking chicken, rubbing it into top of chicken breast with back of a spoon. Once chicken looks 1/2 cooked (times differ fresh vs. frozen), flip breast. Spoon balsamic mixture over breast, cover and cook till done. Flesh should be white throughout. Slice, and serve with remaining balsamic mixture drizzled over top.
Notes:
My husband created this one, and although it stands alone as a great dish, this chicken is amazing over a bed of mixed greens or spinach and tomatoes. Top it off with your favourite dressing (or another pass over with the balsamic vinegar) and a tsp of freshly grated parmasean (so much more flavour, and the harder the parmasean the lower the fat content), and you've got a meal for two that's simply gourmet.
Hi This sounds like a receipe my husband would like.
I might give it a try but with roasted cherry tomatoes.
