Healthiest EVER Banana Applesauce Muffins

Recipe Ingredients for BANANA APPLESAUCE MUFFINS with Vitamix

1 1/2 cups Wheat Berries
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp sea salt
1 tsp cinnamon
1 tsp nutmeg
2 tbsp (14g) ground flax seed
1/2 cup Walnut pieces
1/3 cup coconut oil
1 medium ripe banana
1 med apple
1 cup yogurt
2 large egg whites
1 1/2 tsp vanilla
1/3 cup Agave Syrup or 1/4 cup Agave Syrup & 4 pkgs of Stevia

Recipe Directions for BANANA APPLESAUCE MUFFINS with Vitamix

  1. 1 & Hard Red Wheat Berries (milled in vita-mix) Put in mixing bowl 1st

  2. ADD: 1 tsp Baking Powder

  3. 1 tsp Baking Soda

  4. tsp sea salt

  5. 1 tsp cinnamon

  6. 1 tsp nutmeg

  7. 2 tbsp (14g) ground flax seed

  8. cup Walnut pieces (optional)

  9. Gently toss with spatula until all blended together

  10. Blend the rest of ingredients in Blender & then pour into flour mix.

  11. 1 medium ripe banana

  12. 1 sm-med apple (cored)

  13. 1 cup greek yogurt ? 0% fat

  14. 2 large egg whites

  15. 1.5 tsp vanilla

  16. 1/3 cup Agave Syrup or cup Agave Syrup & 4 pkgs of Stevia

  17. Mix with spatula until fully mixed?don?t forget the flour at the bottom of the bowl.

  18. Add 1/3 cup melted coconut oil & fold together. (You can add oil with the ingredients in the blender?I prefer to add it after I start mixing the wet & dry ingredients)

  19. Spray muffin pans with baking PAM ? wipe out excess (I use my finger to spread the spray)

  20. Scoop batter with either or 1/3 measuring cups (1/2 = 6 tin muffin pan) (1/3 = 12 tin muffin pan)

  21. Bake at 350 degrees for 20 minutes = let cool before removing from pan
