banana bread

anyone have a good low cal way to make this?


and any ideas for what to do with the rest of my browning bananas?

I'm not sure of a low cal way to make it, but I loooooove banana cake!  And I know the bananas are supposed to be pretty brown to give it a good flavor.

Can't help you too much with making it healthy; you could try to replace applesauce (or more banana) for the oil, but then you would just have the most cavity inducing cake ever!  Personally, I just make full-fat banana bread from time to time and just moderate how much of it I eat.


Anyway, my suggestion was actually what to do with the extra bananas.  If you peel them, freeze them on a cookie sheet lined with foil, and then dump them in a bag when they are solid you can keep them around for morning smoothies (or "milkshakes" with instant breakfast or Ovaltine) or keep them in the freezer until the next time you want banana bread.  They keep in the freezer for a loooong time.

If you search "low calorie banana bread recipes" in google you'll find tons of ideas. Or use the recipe search bar here in CC, I'm sure that has some good ones too.

As for what to do with the bananas.. you could peel them, cut them in half, and dump them in a zip lock to freeze for later use. You chould mash them into pancake/waffle batter, slice them on top of oatmeal/cereal, put them in yogurt, or make a smoothie out of them. Or eat them plain for a snack, maybe with some cinnamon sprinkled on top.

Sounds very good...what kind of pancake mix do you use?

Your recipe already has a lot less oil than normal :)

i use bisquick pancake mix. it always seems to turn out better then anything else.

i have tried this banana bread recipe,not sure if you're opposed to using splenda or not but i found that if you cook it in an 8x8 pan and cut it into about 50g peices,each one is about 80cal,so not bad at all in my opinion.my family loves these.

1 1/4 cup wheat flour

1 1/4 tsp baking soda

2 1/2 tsp salt

2 egg whites

1 1/2 cup mashed bananas

1/2 cup splenda

1/4 cup applesauce (can use low fat yogurt for a small difference in calories)

3 tsp vanilla

1/8 tsp nutmeg

1/2 tsp baking powder

1)mix dry ingredients except sugar

2)mix wet ingredients and sugar

3)mix wet ingredients into dry ingredients

4) pour into pan and bake for around 30 min at 350degrees

hope this helps,they arent too sweet,which is how my family loves them,but you can easily add more spenda if you want yours sweeter

If you use bisquick pancake mix, I think you can lower the quantity of oil by just a little bit (not too much because the texture will change!), since it already has some shortening in it.

Unfortunately I only have aunt jemima pancake mix, I don't think it would work :(
