Muffins
| 1 1/4 | cups all purpose flour |
| 2 | cups bran flakes, crushed in food processor |
| 1/2 | cup sugar |
| 1 | tablespoon baking powder |
| 1/2 | teaspoon baking soda |
| 1/2 | teaspoon salt |
| 3/4 | cup milk, lowfat, fluid, 1% Milkfat |
| 1 | teaspoon vanilla |
| 2 | bananas, mashed |
- Preheat oven to 400 degrees F.
- Combine dry ingredients in large bowl.
- Add milk and vanilla, stirring just until combined.
- Mix in bananas.
- Divide batter into 12 muffin cups (spray pan with nonstick spray first).
- Bake until toothpick inserted in center comes out clean, about 15-20 minutes.
- Transfer to plate or wire rack to cool.
- Serve warm or at room temperature.
