low fat low cal muffins. Makes 12 good sized muffins.
| 1/4 | cup sugar |
| 1 3/4 | cups flour |
| 50 | g chocolate (choc chips or grated chocolate) |
| 1 1/2 | tsp baking powder |
| 1/4 | cup warm water |
| 1/2 | cup yogurt (plain unsweetened) |
| 1 | egg |
| 4 | tablespoons milk |
| 1 1/2 | tbsp vegetable oil (i used olive) |
| 3 | ripe bananas |
| 1 | tsp vanilla |
- Sift and combine first 4 dry ingredients.
- In a separate bowl beat all wet ingredients except bananas.
- mash the bananas and add them to the wet mixture. If you like the banana chunky leave as is, if you like it smooth beat again.
- fold wet and dry together
- baked in greased muffin pan at 180C/350F until done (15 min or so)
- For lower cal muffins omit chocolate (each muffin will be 140 cal).
