Bananas - storage and freezing
Hi, I just got 4 bananas, with a tiny bit of green on them. Problem is I'm going away for the weekend, and want them for when I come back.
I know once they are ripe and you just get brown spots, its safe to put them in the fridge, but they're not there yet.
So I was wondering, can I freeze them? Answer is yes, but most of the sites on the net say to freeze them out of skins. But they tend to go brown/grey when I do this for more than 2-3 days. I know I could cover them in lemon juice, but that defeats the purpose as I want them for sweet ice-cream/putting in porridge.
So has anyone tried to freeze a whole banana, sucessfully? Should I just throw it in the fridge instead?

Putting bananas in the fridge stops the ripening process, so you want to put them in there once you get them to the desired ripeness.
They really won't be suitable for eating after you freeze them. I freeze bananas all year round but I use them for baking only. They turn to water and mush when you freeze them. What I would do is leave them out for the weekend. Then when you get back, throw them in the freezer and use for a future baking endeavor. That way they don't go to waste.

Put bananas in a cupboard to ripen them. They like the dark.
i freeze them all the time. just peel them, break into chunks, and put in a freezer container. then all you have to do is throw a few chunks in the blender with some yogurt and orange juice, and you have a terrific smoothie! i usually wait until they are very ripe to do this, but it doesn't hurt to do it sooner. they just won't be as sweet.
I always freeze them in their skins, in a freezer bag. The flesh stays nice and yellow and it's easy to squoosh it out of the peel after thawing. I've been doing this for years, and in fact, right now, have 3 just waiting to be made into banana bran muffins.
OK, I'll do an experiement and let you know. I have 4 bananas. One will stay on the shelf, one fridge, one freezer skin, one freezer wrapped. I use them in smoothies and baking anyway, so its ok if they go a bit mushy but I wanted their colour to stay kinda true. :)

I froza a banana once and forgot about it for like 3 months. When we defrosted the minifrige we found a compleatly white banana covered in ice crystals about an inch deep.
