Vegetarian Main Dish

Ingredients
17 1/2 oz firm tofu
2 large onions, thinly sliced
1 cup barbecue sauce, low salt
Directions
  1. Squeeze any excess water from the tofu. Slice the block of tofu across its short end into 1/4 inch slices.

  2. Place the onions in a baking dish and pour 1/4 cup of barbecue sauce over them. Add the tofu and the remaining sauce. Marinate in the refrigerate for several hours.

  3. Preheat the oven to 350F.

  4. Bake the tofu and onions for 20 to 30 minutes until the sauce is bubbling hot. (The tofu can also be cooked on the grill, brushing frequently with barbecue sauce.)

  5. Serve over rice or stuffed into pieces of crusty French bread with side dish of steamed vegetables.
