Vegetarian Main Dish
| 17 1/2 | oz firm tofu |
| 2 | large onions, thinly sliced |
| 1 | cup barbecue sauce, low salt |
- Squeeze any excess water from the tofu. Slice the block of tofu across its short end into 1/4 inch slices.
- Place the onions in a baking dish and pour 1/4 cup of barbecue sauce over them. Add the tofu and the remaining sauce. Marinate in the refrigerate for several hours.
- Preheat the oven to 350F.
- Bake the tofu and onions for 20 to 30 minutes until the sauce is bubbling hot. (The tofu can also be cooked on the grill, brushing frequently with barbecue sauce.)
- Serve over rice or stuffed into pieces of crusty French bread with side dish of steamed vegetables.
